I just made these cookies, twice. So, you definitely need walnuts or some other nut in there for the purpose of keeping the structure intact of the cookie. I found out the hard way with just making chocolate chips and having only one cookie survive....I was very sad. But then I made them again with the walnuts and everything worked and now I'm not so sad anymore. These things are huge and delicious. Thank you Stella!

There's a double chocolate chip recipe online that I make for these and they turn out fine. It adds in cake flour and cornstarch to help maintain the shape if you don't like walnuts.

JTyme08. I made these last week for a family party minus the nuts, a couple of people had nut sensitivities. I also tried the same recipe plus creamy peanut butter for a study group, people loved them! The only thing different in my recipe is the addition of a teaspoon of cornstarch.

I have eaten so many Levain Cookies there my favorite cookies of all time. I live in New York and whenever I get the chance I go there and buy a dozen they are expensive though they cost like $5 a cookie but it's worth it.

Thank you for the great tips on all your videos! I especially appreciate you said to toast pecans, but not needed for walnuts. I have just been generally toasting all nuts for better flavor. So this nuance was interesting to me. Also, BraveTart is great. I have made several recipes from it and they are all great.

This Cookie recipe is NOW my favorite. Already made 4 batches. Only thing had to cut the salt in half, was a little too salty. (yes I use unsalted butter) 2 teaspoons of the kosher a bit too much. Stella you Rock!! Oh and these cookies go great with Red Wine, just saying.

I thought my cookies were big. I pack 126 grams of dough into 5 inch tart pans and when they expand that get 1/2”-3/4” thick and takes on those nice ridges like a peanut butter cup.

A market near my house makes these. I had no idea they had a specific name, but that makes sense. I wonder who “stole it” from who though lol. Either way, I agree with the person who said she over baked them because the ones at the market are gooey and almost raw looking on top. Plus, they look like little round piles. In fact, any time they look fully cooked like hers, they look very over done compared to the others they set out.

I like the look of the huge cookie, but I am allergic to nuts. In this case though, it looks like the nuts really add to the volume of the dough. Could something be substituted for the nuts?

Pro-tip to get them to look even more like the Levain Bakery cookies: tear the ball of dough in half and place the halves, tear side up, on the baking sheet. That's why they look so crinkly and rustic.

I've never had Levain's original but this looked good so I wanted to try it (followed the recipe from the link). It turned out looking delicious but I have to say, I did not like how it tasted. I thought the ratio of sugar to flour was relatively low, but figured it'd make up with amount of chocolate chips. Nothing wrong with gooey chocolate and pecans but it had an odd salty flavor (hard to describe) that left me super disappointed. I ended up throwing it all away. I only tried it once so maybe I made an error with ingredients but I want to lean towards the recipe requiring too much salt, baking soda and powder. Good luck if you end up trying it!

This is good but can be improved a LOT. Here are my notes in case anyone wants a 99,9% levain cookie at home: 1. Cold cold butter. Straight from the fridge. 2. Do not overmix butter and sugar. The goal is NOT to make a cream out of this ingredients. Just mix it up a little bit. 3. Order matters: butter, sugar and mix. Then, flour with chocolate chips/chunks and walnuts. Finally, eggs and vanilla. Again, DO NOT overmix. 4. Use two kinds of flour: AP (~60%) and cake (~40%). This helps because gluten content can cause a lot of trouble with your final product. 5. Dont press too much your cookie balls. Follow this tips and you'll see that classic "raw" interior / crispy outside on your cookie. If you dont believe me just look at 7:22, it is cooked throught and thats not a levain cookie.

But if you watch the Levain bakery video, they don't roll them before baking. They even said " no baseballs".

I love me some Stella but I agree - I've made both recipes and Joshua's nails the Levain original. Follow Stella's instructions and use a thermapen to measure the firey innards. She likes them around 170-180, I found around 150-160 leaves them with the proper amount of goo and moisture the next day.
