Your tomatillo-avocado sauce looks amazing! When I lived in Scottsdale, AZ, I would go out to eat “Clare Enchiladas” at a little restaurant in Tempe. The enchiladas had whole cooked pinto beans, avocado, cheese and were drizzled with a tomatillo-avocado sauce and garnished with white Mexican cheese and cilantro. Light, yet so filling and good. Have you ever heard of them, or do you make something similar?

We have an amazing selection of vegetables and fruits here in south Texas, not sure where you live, but here we dont have a problem, all our grocery stores have them...you can use small ones too, but it might just take more than just 3. Thank you so much for your comment. ❤

You might have to shop at a specialty store like at Asian/Hispanic store for international Food. Just do a search in your local area online. In Virginia they sell them in the grocery store the same size as hers.

Every time I see somebody hack into a Avocado seed with a sharp knife that you use to chop Veggies, I cringe, so many people go to emergency every year by missing the Seed and cutting through the Avocado AND into your hand...those steak knives with the scallops at the cutting end is ALL you need, if the seed won't come out after you've stuck the knife in, then your Avocado isn't Ripe and won't have any flavor anyway.

I just made this yesterday, buy I boiled everything, didn't even occur to me to cook in a skillet with oil,I'll definitely do that the next time. I was sad that I forgot to buy cilantro, it makes a huge difference. I also put in 5 Serrano Chile's..thought I was gonna die when I tasted it so I had to add 2 more Avocados. 😲😂🤣

No my friend, tomatillos look like tomatoes but they are not, they are more acidic and they are delicious in a variety of dishes especially salsas...remove the husk and wash the sticky film off, then prepare.
