Since truffles are meant to be eaten at room temperature and also stored at a very cool room temperature (usually 65°F)
It is very important to follow strict safety guidelines when making an d especially rolling truffles.
Also wear gloves when handling ganache for rolling into truffles.
Our hands have bacteria on them that if it is transferred to the truffle and then coated in chocolate
You run the risk of breeding molds and bacteria inside the chocolate coating that would not be visible until someone takes a bite
Additionally in the video you will see that because the environment I was working was so extremely hot, I had to put my truffles in and out of the freezer/refrigerator as I worked.
This caused severe condensation that would also pose a problem if I was to store the truffles at room temperature
Professional chocolatiers work in temperature controlled environments that prevent this type of thing from occurring
So if your environment is not ideal while working with truffles, please always store your truffles in the refrigerator for safety
But bring to room temperature for several hours (up to 1 day) before serving.

Damn that looks good. I know it’s a weird time of year for it but I’m trying to cut down on body fat. So I will be living vicariously through you guys. 😭 Luckily none of the baked goods my coworkers are bringing in are vegan so there’s no temptation.

What type of chocolate should we use? Guessing not baking chocolate. Is there anything in the ingredients we should look for to know?

The highest quality couverture chocolate is best for a truffle recipe since it is just 2 ingredients, you really want the quality to be up there..I talk about Callebaut which is a very good chocolate basically you will look for the % listed on the chocolate Cocoa percentage refers to the amount of chocolate liquor, cocoa butter, and cocoa powder that's in a chocolate product Bittersweet chocolate often has around 70%, with added sugar and other fillers depending on manufacturer. Semisweet chocolate has at least 35 percent but usually hovers around 55% I typically use a 55-60% chocolate

I would like to add some instant coffee powder to the chocolate once the hot milk is added. I think some peppermint extract would give the truffles a nice Christmas flavor too.

Ms. Gretchen I would do a play on the flavours found in the Caribbean classics of ponche a creme or coquito,i.e. egg nog for you. So vegan white chocolate, spices n maybe a dusting of coconut.😊

I have a Chocolate Chili Kahlua that I'm going to try with this. It gives a nice warming heat (not spicy) & I think it will be awesome in this recipe. Thanks for this video!

Hi Susan I use a #100 scoop, thanks! I often recommend these because these are the only 3 sizes I use for everything I do! amzn.to/3sbdAoX (but the smallest one is for these truffles!)

Hi! If you want to add some liquid alcohol, should you first reduce the milk quantity in the same amount? And also, but you put it at the end, before putting the milk over the choco so alcohol doesn't evaporate? Thank you 😘😘😘

Hey there, I always write lots more information, notes for success, additional tips etc on the written recipe post. It's always a good idea to go there to get the visuals (I have created charts with all the ratios for settings from soft to firm) This is from the blog post:: Keeping in mind that if you are adding things like liquors and preserves or pastes to the filling You would want to go with the firmest setting listed to compensate for the added liquid ingredients You can add up to 4 Tablespoons of any liquor you like, but average amount would be closer to 2 tablespoons per recipe To answer your other question, I do not evaporate off the alcohol, but you absolutely can by adding it to the milk before boiling. I like the true taste of the alcohol in my truffles. So for my method I add it to the ganache after I pour the milk, whisk it to smooth then add the alcohol
