So I wanted to create the perfect french fry. Sure you could make a quick french fry and just fry them until they're kinda crispy, but then again they'll also be kinda limp and sad. I wanted something with that beautiful crunchy crust on the outside and soft fluffy inside. Something that practically snaps in half. With this method I think we've got just that.

You don't, Just add the brine directly to a pot and have semi-decent temp control with your burner. The reason for a sous vide is to cook a thing in it's own juices and not dilute it. I made this recipe and I have a sous vide device but chose to just use a sauce pan instead.

Michigan doesn't have composting, so I carry my food scraps around town and bury them in wooded areas. If the government won't take charge, it's up to all of us.

Scrub them before peeling, and save the peels in the freezer until you have enough to make a batch of potato peel broth. Great for your mineral boosting game. Or base for veg stock. But where’s the recipe for your garlic aioli accompaniment?

Tried the recipe. Awesome! It worked really well. I didn't use the plastic bag, I used a two pots, Bain Mary style one into the other. The one that contained the potatoes contained the water mix with salt and baking soda. They were both crispy and soft inside. Loved them.

Sprinkle some oil and spices onto those skins, toss em in the oven and boom. Crispy potato skins. No waste

I was going to comment this! Sure the paper is a quick solution (i’ve used old newspaper in the past) but it just created more waste. Also i compost food waste. Putting those skins in the oven is the best solution!

Just paid $8.50 for fries like these last night. Only they were blanched 7 times (so they advertise), and finished with truffle oil in addition to the parm, parsley and garlic. Best fries I ever had.

There us a local restaurant that serves avocado fries. Avocados wedges are coated with something crunchy along with quinoa seeds and then deep fried. The interior are soft and so good to eat. I don't know what's in the dipping sauce but its great too.

Best fries are fried in beef tallow. I also peel over parchment or paper towel, it’s great tip!

Great video. Did the same to sweet potatoes worked fine. But don't throw away the peels. Just wash them and fry them in a pan. Great little salade or to add to something like pork.

Thank you! I don't have a "sous vide" but I just used a pot of hot water on the stove with a thermometer. Best fries I've made yet. Still have a way to go. I think I'm using the wrong oil. What kind of oil are you using? Love your videos.

If you don't have a sous vide and the equipament to vacum the fries could you gently cook the fries super fast in water with vinager and then put them in a bowl with ice and put them in the friege? Do you think it will work?

I always use a "garbage bowl" for food scraps so I can freeze and save them to make a soup stock or use it for composting. It helps with less waste and I find the garbage bowl is perfect for keeping things clean and still sanitary, given it's just veg and no cross contamination.

If you toss the peels in some olive oil and seasoning, you can bake them in the oven and make AMAZING potato peel chips/crisps 😌

Hey Joshua, For extra umami savory goodness, try frying them in the traditional fat - not vegetable oil, but animal fat! Authentic Belgian fries use a combination of horse and ox fat, but beef tallow should do in a pinch! Gives a new use to those brisket trimmings. And thanks for crediting it to Belgium! Great tips Josh! I never tried to sous vide my tatters, I steam cook them, 12 mins total time ( I start the timer when I place the whole thing on the stove) gently salted, then I just let them dry for a couple of hours and fry them 1st at 140 degrees Celsius for 8minutes and after for 3to5 at 160, I use Olive oil in my fryer, and that it!! Instead of olive oil, try peanut oil, my favorite for French fries. It's smoke point is significantly higher which leads to better results if reused. Also, as a result of typically being highly refined, it has a neutral flavor which doesn't interrupt that of the potato. Aaaaaannnnnnd try not to be gentle, potatoes can take agressive seasoning.
