I am a home based Baker. I bake for friends and neighbours. But mostly people don't want to eat healthy homemade chemical less food items. They don't bother about hygenic method or quality ingredients.

This is how it is made in almost all commercial bakeries in India. Butter is almost never used. Dalda is what makes it commercially feasible. The video does not explain everything but it gives us a fairly good idea. Thanks for the info.

I opened a bakery very hygenic very nutritive but people don wan to pay.retail want low prices. When I was adding expensive ingredients everybody was complaining. When I didn't care about it everybody was happy.Even they liked one day older material and retailers sell 2 days older.

Size is the key buddy,keep making good quality product and try to reduce its size by 20%,keep the price as costomer wants but size can be cut short.just a friendly advice so you can make gud product.

gud video but after the first fold before dough resting in d tin how long did he keep it for and how many refold did he do before flattening it out?

if they maintain hygiene then cost will be high,which people will not afford. I have my home Bakery. I know how hard it is to maintain cleanness. as my business is home based that's why I can maintain. But in a large Bakery it is hardly possible

R u serious dishwasher n kitchen cleans comes for 40-50Rs can't the afford such low amount come on each puff costs 50RS n materials needed for that comes for 10 rs 40Rs profit can't they invest a single puff profit on hygiene

Now i know when i eat a puff pastry from a bakery, that white thing that forms an unpleasant layer on the ceilings of my mouth is basically blotches of dalda. i hate that feeling, and am sure my arteries will also hate the traffic jam this will create eventually.

These days they do not use dalda its expensive ; they use an even cheaper alternative called unipuff which is a vegetable fat alternative.

I didn't notice anything unhygienic there! The dough mixer, table and the oven are the main objects in kitchen and they seemed clean. If you want cleanliness like Paris and London bakery kitchens then why are you watching an Indian video? Thanks for info; it helped a lot in understanding commercial puff pastry dough preparation.

Dont know when these Indian bakeries will raise there standard, Personal Hygiene, Dept Hygiene, product quality etc thy desperately needs training. Very sad to see these un-educated/Un-knowledgeable bakeries are fully Contributing towards reducing the life span of Indians.

i opened a bakery few days back tried to teach these guys how important it is too keep it tidy and clean as its very dangerous we are the ones who can send our guest to doctor ... they dont care ... one quit just because i was very particular on cleanliness .. they even dont want to wear apron

true but on the other hand most professions in india including high-tech ones are just like this bakery. I would love to see your kitchen though. people like you have delegated the labour to people whom you call dirty and discriminate against so you get these results. the baking trays are ok though they are just burnt with the oil from the baking
