It really helps to dunk the block of butter into the flour when grading, makes is much easier to grate

In Trinidad we put , minced chicken, beef, pork, fish, cheese ,potatoes in them, and call pies.😋 U can maybe try it out next time.

I've found that freezing the flour helps too. Just pop the bowl in the freezer until the butter is ready. I've also learned that a bench scraper can be your best friend!

I tried the American butter, against your advice, and it still turned out nice. The good butter is so expensive, I didn't think it would hurt to try the cheep stuff. I'm glad I did. Maybe it depends too on the specific brand.

I've used only American butter, common supermarket stuff, and it always works perfectly fine. But I think he works the dough too much with his hands; that may be part of the problem. I work it for only a few minutes at a time and then stop and refrigerate for a while. It's key that the butter not melt or even get too soft. I start it the old fashioned way, with frozen blocks of butter and beat them with the rolling pin. lol

I've been making scones like crazy for the past month. One tip I learned from a commenter was to put the cheese grater in the fridge. I tried putting it in the freezer but my frozen butter got stuck every single time. I switched to that tip and the butter released from the grater with just a tap. You don't have to keep it in there long. In fact I noticed the longer I did it didn't release as easily. I'd say about 15-20 mins tops and you should be good. Hope this helps someone...

Puff pastry is one of those things, like soufflés, that terrify even many excellent and experienced cooks. Once you realize its all about patience and (simple) technique, and then your glorious, golden product emerges from the oven looking absolutely stellar, you become a lot harder to frighten or intimidate in the kitchen.

Edit: I just made the pastry...it is absolutely amazing!!! Give it a shot without any hesitation. If you live in india try it with president brand butter and not amul. It does wonders

I never use anything but Kerrygold. For years, I would try to make my Norwegian grandmother’s Christmas cookies and they just didn’t work. One year I tried Plugra and they worked. I just finished making 8 kinds of Christmas cookies. I used 10 pounds of Kerrygold but it’s worth it. They are beautiful.

I just roll it out the same thickness as store bought and cover it in egg wash, sprinkle with pink salt and lots of caraway seeds and bake until golden brown. Best quick snack ever, especially with beer 😊💖

Butter... flour...lots of chilling, folding, rolling. I noticed when I used to make this that the butter would pool by the ounce while it was baking. Maybe that was because of the water content. It still came out ok, but the butter on the bottom would formed a very brown layer of very thin film (When I made this or croissants I used to get the butter from either Costco or a local dairy.)

I only use Plugra butter. I also laminate my butter and dough in an opposite form. I create the dough as the butter block and the butter as the outer dough layer. Sounds crazy, but it works like a charm! I have made this rough puff for many things, but it doesn’t work if you want to do decorative scoring or defined laminated layers. Don’t get me wrong, rough puff is my go to... but if I have extra time I make the traditional French puff pastry
