Pyramid Rice Dumplings (Bak Chang)
Today Nok shows you how to make her vegan version of an Asian treat, bak chang, or pyramid rice dumplings. From the Hokkien culture in her native Malaysia, they are also known as rice dumplings. Usually wrapped in bamboo leaves, today Nok uses banana leaves, more typical here in Costa Rica. They are made with sticky rice, mushrooms, pickled turnip, kidney beans and taro root (known locally as Tiquisque). You can be creative with the filling, for instance, lotus seed is sometimes used as well.
