So what DID the Victorians eat...?
Hello friends! Welcome to another episode of Betty Crocker and Beyond! Today we're going to make Victorian bread, and it's WAY more confusing than I thought it would be. Not only did I make my own yeast -- which I've done with Sourdough, but never like this -- but only half of the recipe had measurements and uh... well. You'll have to see for yourself how it went!

Oh my goodness Kristina, you are amazing!! You've just taught me what on earth to do with our wandering hops that grows in our garden, it went to waste last year as I thought it was just for brewing beer and we don't drink! I will be using this recipe!! It's a shame we live countries apart or I could just pop over and give you some when it grows in the summer! ❤

This was very interesting and I miss real bread. I haven't had gluten in many years. Making homemade bread used to be one of my favorite things to do. Celiac is a real pain.

I am so intrigued by hops yeast! What a cool discovery. And so very strange that it was the preferred yeast to use not that long ago and that knowledge seems nearly lost in just ~200 years.

Kristina.... Umm it wasn't weird until you made it weird!! HAHA . You did AMAZING! From another with ADHD let me go get my tea then I will continue.... (5 min later) I think you did better than I would have! At the end there I would have been like UMMM NOPE and would have been scared to use that!! I would have totally tossed it. I LOVE your bravery and courage to even attempt to make Victorian Bread! I am here and so excited to see what you cook next!! The 1950's is my FAV era! and you looked SO beautiful! What you may want to do is look for information on "Barm bread". I'm sure you're aware that Victorian bakers got their yeast from the breweries at the time. Barm is a yeasty by-product of making beer. Townsends has a great video "A Discussion On Barm" on youtube, it's about 10 minutes long but I found it fascinating. They've also got an interesting suggestion in there about how to find barm if you're not making homebrew yourself.

This was so interesting! My great great grandmother, bad ass working class victorian housewife & mother to 10 that she was, baked a stone (14lb) of bread a week (& fancy cakes on weekends) & I guess I never really thought about how she did it but learning that she would probably have made her own yeast too just makes her seem even more bad ass than she did already. Would you feed this yeast like you feed a sourdough starter?

I bake every loaf I eat. I never buy bread. THIS is the most interesting bread video I've seen online! It's not a fail. I'll probably never do this. I used to make sourdough but it takes too long for a product I can't make grilled cheese with 😅. But I did not even know about hops yeast! So interesting! Thank you!

I love all the red accents in your kitchen and nail polish! And I love your commitment to the hair and Victorian blouses. It’s not easy wearing Victorian shirts in the summer. I used to work in a super cold office. It was always so cold in there, so I got to wear my pretty Victorian/Edwardian blouses from Free People and Gap. But when I would run errands after work I always got sooo hot lol. It ain’t easy dressing in that clothing unless the AC is cranked way down.

Homemade yeast can definitely be a challenge. I've tried to making and keeping a sourdough starter several times, while living an extremely hot/humid/close to the equator climate and so much of my bread making has failed just because of not knowing how to adapt my baking to this climate. Loved this video, can't wait to see more fun, experimental historic cooking/baking!🥰

I loved watching this adventure! I know from regular cooking that when a recipe calls for a certain amount of fresh herb and you only have dried, you use half the amount called for. Maybe that’s what happened with the hops and that’s why it overflowed? 🤔

That’s possible! Or the jar was just too small. It was like 20 cups of water (I think) so that’s quite a bit of fluid!!

The Gibson Girl hairstyle & brooch/choker is such a beautoful combination on you! I love this video, thank you for experimenting on camera for us ❤ Ive had quite a few packet yeast bread loaves turn out like yours lol. They taste the same its just not as satisfying a mouth feel. Ive had some really crumbly ones too, i could barely cut them before they disintegrated and i guess they were too dry but i didnt notice when kneading them somehow lol.

I’d love to see you do more Victorian-Era cooking videos! You might want to check out Agnes B. Marshall. She had a cooking “empire” in the late 19th century, & is sometimes known as the “Queen of Ices” for her frozen dessert recipes. You can find copies of her cookbooks online. I covered her last fall in an episode of a Victorian history podcast I host, & was fascinated by her!

Hello Kristina! I’m also a lover of vintage cookbooks, and I make sourdough bread at home weekly. It definitely looks like the bread did rise. If you score the top it will help it not crack on the side. I’m wondering if, like sourdough’s starter, it will stronger with age? I wonder if you are supposed to keep feeding it? I’m also wondering if you need to add that much liquid on top. I’ve found with sourdough starter that the thicker the “paste” you make, the stronger the starter is. Great video!

I loved seeing this recipe! No idea you could make bread this way, I thought most bread was made with sour dough. From my experience bread making it looked like maybe you had either too much flour or not enough water..but either way it’s a win!

You made enough for 50 jars lol. That is a major Bakery recipe. Lol enough to make 100 loaves of bread for an army. The jar should not have more than 1/4 of the mixture in it. You do stir the mixture with a non-metallic spoon. I make homemade yeast just from flour. My grandmother would mix 1 tablespoon sugar, 1/4 cup flour, 1 cup of boiling water into a Mason jar and stir, cover with a piece of linen towel and the band until cool. Then she would mix in 2 tablespoons of either sour cream or yogurt she made from scratch. She would put the lid back on as before and set in the darkest corner on her counter that never got direct sunlight. She added 1 tablespoon of flour everyday and would stir it with a wooden spoon she bought just for that and nothing else. If it was getting too dry she would add boiled water that had cooled until it was the consistency of yogurt. It is a fermentation and will smell sour. It is where the original sourdough bread came from. Yeasted bread came from buying the grains and hops that beer makers would throw away to make true yeast. That also takes flour and sugar but takes more steps such as making it watery enough when it starts bubbling to strain through a cheese cloth into another sterilized Mason jar so that the beer dredge can be removed as it has done its job. Then adding 1 teaspoon of sugar, cooled water that was boiled, enough flour to make it the consistency of yogurt. If at anytime you have 3/4 of a jar then split it if you are not going to make bread right away and treat as you would daily. My grandmother did both types. The raw hops to start your own will definitely have a more sour smell then a brewery yeasty one.
