Dennis Ngo from Di an Di in NYC stopped by the MUNCHIES Test Kitchen to make Banh Trang Nuong. This Vietnamese pizza isn’t your typical pie. Grilled rice paper is loaded with homemade scallion oil, egg, littleneck clams, sweet chili sauce, micro chives, and crushed peanuts to make this Vietnamese street food staple.

For every Viet and non-Viet person feeling some type of way about it being called "pizza," the western name for this dish and for banh xeo is "pizza" to help foreigners get an approximation for what to expect when they have no idea what it could be if trying it for the first time. Once they do, you can introduce them to the real name, but there's no need to be dramatic. Personally feel like it might be more helpful to correct misnomers on egg rolls vs spring rolls (not summer rolls), or the correct spelling of BANH from bahn (which is an egregious error imo--if you're going to appropriate or serve the damn dish at your restaurant, at least spell the dish correctly).

This is probably the more high-end version of Bánh Tráng Nướng for real, the normal local street under 1$ version of this snack usually have little shrimp called Tép instead of clam and I don't even think we use chives at all, then for some places, they gonna put some cheese and sausage to it with normal hot sauce like those good ol' Cholimex and sometimes Sriracha, and damn I almost forgot, we gotta put some Mayo to it too, and for the meat, we use minced pork. Ah shite another thing, for Da Lat version of Bánh Tráng Nướng, they will cut them into pieces like pizza, but for the Saigon ver, they gonna fold them in half and wrap it with the most Asian thing ever, newspaper baby, ya dig

1. Nice video. I’m going to have make the journey all the way from Williamsburg to Greenpoint to taste this. 2. I can see why, if you’re used to cooking on a grill, that you’d try using a grill pan. However, given the fact that you’re already dealing with an inferior heat source, and that you want even heat rather than grill marks, wouldn’t a griddle or skillet make more sense than a grill pan?

@linkthai1995
@linkthai1995 Жыл бұрын
Not really, you're eating the normal version, which doesn't have lots of topping so it can be easily folded. What he makes is Banh trang nuong Da Lat, which are full of toppings, and quite more mouthful, so you serve it like that and cut them with a scissors and can share with your group of friends. He did it right, his toppings are fancy though, we wish we have some fancy Banh Tranh Nuong here where they are more experiment with the toppings tbh.

Viet here too, but I understand it for familiarity-especially if you think about non-viets going to a restaurant, and seeing it on a menu. Allows customers to grasp the idea better, and potentially actually order it on a menu instead of taking a shot in the dark on it (Similar to how banh xeo is called “sizzling crepe” in some restaurants).

I have a hard time calling this Vietnamese pizza, because it isn’t. I am confused as to why it was termed that way. To help non-Vietnamese get an idea of what it is? Pizza is bread whereas this is grilled rice paper-which is the literal translation. To give it a western name is misleading. There us nothing pizza about this.
