Hi Aya where can you get the rose jam? As i living the Sydney but I couldn't find it. Oh as I remember from the black star pastry they hold the fruits together with red jelly do you know how to make that jelly thing?Thanks

+Peggy Wang Hi, You can try and find rose jam in Ashfield, and as for the jam maybe try gelatin powder with water and brush it onto the fruits :)

It's not rose jam. It's glaze. You can get it at confectioner's suppliers. It's the same glossy setting agent used on top of fruit flans and is made mostly of gelatine. Also the egg whites need to be soft peaks and the almond meal is folded in, which is a fluid motion not criss-cross motion which makes the mixture clunky. It should be baked longer, until golden, and placed on an entirely flat surface. All trimming into a square happens at the end of the assembly. Watermelon should be seedless and sprinkled with rose water, then dried off. Strawberries should be macerated in sugar and rosewater. Grapes need to be much smaller before being quartered, not halved. Grapes just fill spots of cream at the top in between strawberries. THEN you brush on a fine layer of glaze. There should be a thin layer of sprinkled almond meal between each cream layer of the cake. It gets trimmed at the very end with a long serrated cake knife. Anything else will butcher it. To serve sprinkle a very fine layer of edible dried rose petals and crushed pistachio nuts.

mmhh i mean.. you put 250ml thickened cream and 250 ml whipped cream as the ingredients but i only notice that you only put thickened cream on minute 2:20. so how about the whipped cream? when i have to use it? sorry bad english :'''(

oh right! sorry my bad, you're meant to mix them together to get 500ml of cream :) but if you want to just thickened cream or just whipped cream can do

what about the watermelon seeds ? i didn't see any big black ones but i saw plenty of little white ones . they surely MUST get in your mouth when eating effecting the taste , wouldn't it be better ( & yes , more time consuming to prepare ) to remove them first ?

Don't try watermelon flavour for cake is not good in taste. Specially if ur living in india. Tried it. It backfired.
