🍉🍓 I made this for my kids! They tore it up! I devoured the rest at 3 a.m. This cake made me sleep walk! The cake made me do it 😅 ❣️🍉 Thank you sooo much the interesting cake combination is pure tastebud genius! Plus I love ❣️strawberries 🍓 and watermelon 🍉 sooo much 🍓🍉❣️ The glaze, rose cream and pistachios gave it such a divine kick! 🦵🏾🦶🏾 🍓🍉 I was so depressed and taking the time out in solitude listening to Billie Holiday. Flowers sirrounding me and full scented vegan homemade candles 🕯️ burning. Was the solution. Nothing has motivated me in over a year. So when I watched your video and became lost in the aesthetic of your craft. I felt myself starting to feel the motivation. That I thought was gone forever. Start to rise 🌹 I took full advantage and went full speed ahead! Your voice was plaiying in my home for hours! When I took my first bite. This is a very good set of instruction and you make it look so easy. The result is a cake that looks exactly like the Black Star original I could probably make it the day before but leave the strawberries and pistachios off until the next day? As long as the watermelon holds up between the cream…. I wonder. Or just make the dacquiose layers at least

I wouldn’t freeze it, the gelatine should help stabilize the cream, but do keep it in the fridge for a bit before eating :)

For the daquoise can we replace the sugar with date paste ? Does extra moisture in the daquoise make a difference ?

I made this cake . It came out beautiful, followed all your steps but waited to put the watermelon couple of hours before eating, and follow other steps to complete. . The Almond Dacquoise was made the night before. Water melon left for Maceration for longer ( at least an hour ).

Hi, I have a convection fan oven so yes, as for the gelatine, you can skip it but from my experience it wouldn’t hold shape and turn out as pretty, taste is the same

Hey! You don’t *need* to have a mould, I’ve made this in a standard round cake tin with a removable base (cut it into a square shape if you’d like) - or just stack the layers then cut the edges. The mould just makes it a bit neater and easier 👌🏻

I got them at the supermarket in the baking section, it’s quite popular in Mediterranean cooking so look in spice sections, or Middle Eastern shops too. Alternatively, amazon 😅

Thanks Sara! Definitely try it out. The cake layers are quite soft as they would have absorbed some of the moisture, it feels like an almond sponge rather than a biscuit :)

You can omit gelatine if you want. It’s used to help the cream stay firmer and have a better shape, would not impact the taste
