This is how you make wine from fruit. This Part II is about finishing Back Sweetening and bottling of the Plum and Pineapple Wine in Part I.This video concentrates on the making of wine directly from fresh picked fruit or frozen fruit in a 1 Gallon batch. It is relatively simple once you know the equipment you need and the necessary ingredients and the process of turning fruit into wine.
It is a great hobby and if you like wine, you can not beat homemade wine that you have made. You can share with your friends or just keep it all to yourself. Once you get the equipment and ingredients you can make wine from .50 cents per bottle to 3.00 dollars per bottle which is cheap.

Just a friendly tip. I would mix the bentonite about a hour before you rack so the bentonite has time to completely absorb and turned into a slurry. I also use a chop stick to stir the slurry due to less clumping.That way when you start to rack the wine, you can pour the bentonite slurry immediately after racking to eliminate the time the wine is exposed to oxygen. But that is a sound fruit wine recipe. I do love the way bentonite brightens the wine.

Love all your videos. Just one tip. For Bentonite, add it to warm water and let it sit for an hour. After that, it’s literally no struggle to blend it to a slurry.

I've made some blueberry wine solely using your videos. they've been fantastic. here's a "lessons learned" for my first time through at least for bottling. so my first bottling experience was barely saved because my wife was working from home. I tried using the 1/2" autosiphon that was way too big for the 1 gallon carboy, and at the time I didn't know, but my filling wand was broken and leaked by, so I ended up spilling maybe a cup of wine on the floor and all over the place before just getting rid of the wand and using my wife in it's place. Lesson learned, get a spring loaded bottle filling wand and probably go with the 3/8" tubing set for that so you're not bottling so fast.

Very simple. This recipe will produce a dry wine every single time... just at the end do not backsweeten it. It will be very dry. You get to choose how you finish. Dry sweet semi sweet.

I started the Small Batch Pineapple Wine on August 25th. Checked and Hydrometer was at 1.00 so racked into my Carboy. Thankfully I ordered the kit for Mason Jars because I had extra. So excited for next step. Will check my Small Batch of Plum Wine tomorrow.

How important is it that the Hydrometer read 1.000. Mine was .999

That Is perfect....to get an exact abv you would have to use an abv calculator if want to know exact abv

It's fun to look at you doing your wine. You make it looks like it's fun and easy. But when I refine my wine I not only try to clear my wine also I try to save the aroma and color of my wine. So I use minimum clarify agent. Because fruity taste and color is also important to me.

I just finished day one with a plum wine. The sg before fermentation is 1.042 only (about enough for 5.5% potential abv). I haven’t added any yeast yet. Should I add some additional sugar before adding yeast to boost my potential abv? Or do you recommend just following through as is for this batch and then being more careful with ratios for the next one? P.S. this is my first time ever attempting home brewing and you are the best resource on KZbin for beginners

Is the tap water you are using chlorinated? Just wondering if that's ok to use or if I should go buy spring water or something. And also what is being used in the airlock? Welcome to the hobby you are going to have so much fun. I just use Tap water because wine works best with the minerals in your water so no problems. If water heavily chlorinated to taste and your water quality not good I would use spring water. For airlock water is just fine. Welcome aboard. 😁😁

Just let gravity take its course. Do not squeeze you will get very fine particles and then you will try getting that out later. If you followed this recipe no extra juice that's in bag is needed. 👍👍😁😁🍷🍷

Love your videos on wine making. I will definitely give them a go soon. Have you ever tried a rhubarb wine? I have an abundance is all. It doesn't seem like it would work as it isn't juicy like a pineapple, but maybe simmering in the sugar water solution for an hour would help soften it and extract the juice? What are your thoughts on this?

Oh yeah I would definitely try that. But agree simmer in some water without sugar in it though to get it tender then add it all to fermenter. I bet it would be surprisingly good. 👍👍🍷🍷

Thanks for your contribution to this hobby! Quick question: why not cap and rotate carboy instead of trying to stir with your paddle handle, then cap with air lock for racking?

Not sure where your at in the process. But we stir to let oxygen in for healthy yeast in first 3 to 5 days. Be sure to watch my oxygen video on that.

You want a sparkling wine... it can be very dangerous because you need great bottles to handle pressure and also cages so corks don't blow. Best to add some carbonated water after opening wine to be safe.

Do you find any difference making wine during the summer or winter? Does the temperature in your home affect the yeast and how the wine turns out? Would putting your carboys in a cold basement be okay?

Most wine yeast work in any temperature anymore so no difference. All my carboys are stored in basement about 60 degrees all year. Just don't ferment in basement do at room temp when possible.

I'm one of your big followers. It's been 20 days. My pineapple wine is tart and doesn't smell that good. 😅 I'm worried about the final outcome. Is there anything wrong 😞?

Thanks for watching us. Don't panic. Is fermentation done? Do you have it in a CARBOY yet? Most likely you are just smelling the dead yeast. As you rack a few times removing that yeast the smell will go away.

Yes get that in a carboy as soon as fermentation is done. Or it can turn to vinegar. Oxygen is bad after fermentation. Yes Bentonite clay will work I just never used the natural clay .

I love your videos. I have a strawberry and a banana small batch currently brewing based on what I have learned from you. I do have a question. A bit of back story my folk have grapes growing on their property. The guy that was making wine for them retired from wine making so I wanted to learn how to make wine so we could continue to have wine from their grapes So I started researching and this is how I found you. You do a great job teaching and I enjoy learning from you. My question is this. Will this recipe work for fresh picked grapes?

Each time I tried with raw pineapples my wine turned sour, I boil my pineapples before first fermentation and it works for me...dont know why

Now that's strange. Pineapple wine is my absolute favorite. Never had to cook pineapples and would think lose alot of flavor that way. But if it works... usually sour wine can be caused by too much oxygen but could be other factors too.. thanks for watching the channel. 🍍🍍🍍🍍🍍

No bentonite does not affect taste at all. It will all be removed in rackings.

after primary, should i keep it in my cold basement for 30-45 days? the fermentation is done, so a very cold room is good right? like cold crashing. thank you for answer.

A cool dark place in secondary is best. But thats not cold crashing... if you followed this recipe and going to secondary fermented is done if at sg of 1.0.

Can you use other sweeteners at the last stage? To keep it sugar-free....like stevia or agave nectar?

Yes I know other wine makers have done that....however Noone knows the longevity when aged for a long period of time.

I have never tested any off taste from using stabilizer. Wine does definitely change with age... but to be honest this fruit wine i think taste the best between 2 to 6 months.. i have some older age bottles i just prefer the younger wine. Great question😁😁👍👍🍷🍷

Can you make a video of wine aging please. I wanted to make some wine for now and put some aside for a few years. After reading some forums I came to find there is some fruits that are better for Longer aging than other but I wasn’t able to get an answer of what kind of wine is good for storing ( 5years, 10 years).

It depends. White wines or lighter fruit wines should be chilled red wines or darker fruits room temperature. But really up to your liking but they do taste different at different temperatures for sure . Great question. 😁😁👍👍🍷🍷

Love your detailed instructions and advice, thanks so much for taking the time. One question - once you put the potassium sorbate to kill off the yeast - do you need to put an airlock? Could you put the wine in an airtight container without the lock?

Once you add potassium sorbate and sweetening at the end of the process you should be bottling it to keep it fresh.

I never degass just Not necessary.. However when i stir my bentonite for filtering that is doing some degassing.

I think I'm ready to bottle my wine, but I've been racking my wine for 4+ months, is this a problem? or is 4 months not too long

Nope thats just fine as long as no headspace when racking. If it's clear it's ready.

Do you need to sanitize the pot that you dissolve the sugar in? Or is it ok because you are adding heat?

I made some Blueberry wine today using your recipe,but I run hot water into bottles to get suds out,I don't want anything in my wine,and the hot water makes bottles dry faster

Hello. I just started my second racking after 5 weeks. After two weeks of the first racking, my wine started smelling like “rotten eggs.” I read in another comment that the smell goes away during the second rack. It has only been the second day into the second rack for me but I am nervous because the egg smell is strong. I used bentonite and man the wine clears up so fast with that stuff! Anyways, why is my wine smelling like gross eggs? Side note: Yesterday I started a new batch of berry wine. 5 gallons! I’m nervous about that. I put the yeast in at noon today. Hopefully this batch doesn’t cause any anxiety haha

That's fairly common but will slowly go away with additional racking. Did you stir your wine in primary fermentation for first few days? It can also be caused by high temperatures when fermenting. Stick with it and should go away gradually. Aeration will also help as you rack it. Yes bentonite is great stuff. 👍👍 keep me posted.

Hello, I have some questions that I hope can be answered. Is it normal that once I passed the wine into the 1 gallon bottle, small bubbles continue to be produced? And, how dangerous is it not to remove yeast residue? i.e., to avoid the production of acetic acid It is because some mouths ago I tried to make some apple wine, but I think I made some wrong, because at the end of the fermentation it tasted like acetic acid. Now I am doing guava wine and I don't want to have the same problem. I hope you can help me, thank you!

Yes it is normal for fermentation to continue in secondary. But don't rush wine making. If it is bubbling in primary let it go for few more days. Once all your sugar Is converted to alcohol yeast will die off and settle and make easy to remove the dead yeast. Hopefully you followed my recipe as all sugar will be converted and produce dry wine. There is no danger to dead yeast so that is not an issue. Hope that helps. 👍👍🍷🍷😁😁

Usually 3 to 4 months. Some people not concerned with pulp in wine so will bottle sooner and skip a racking. I am testing a shorter time about 2 months with my banana wine so stay tuned for that. Great question. 👍👍🍹🍹

It's all depends on how clear you want your wine to be. When you look people do in KZbin it's fast and easy but in real life it don't work that. I rack my 5 times before I filter and usually that take 6 to 8 months.

No i never degass. If you watch other videos where using bentonite that will do some degassing for you.

How about adding the sugar directly to the brew then stirring it in, instead of adding more liquid? Doesn't that affect both the flavor as well as the alcohol content?

Not sure what you mean. Your adding water to get to the abv you want. Adding more sugar water would defeats the purpose of bringing abv down. Flavor will not be affected by this recipe. Accounts for addition of water

Your sugar may not totally dissolve and may get crystals in your wine. It is best to heat up so becomes clear and wine stays clear. Plus just adding sugar will require alot of stirring and adding way too much oxygen to you wine which is not good at this point. Great question👍👍

It’s kind of hard to describe but it’s not a a pineapple taste. The taste isn’t bad but it’s not hey that’s pineapple wine. It’s crystal clear but it has a beer like yeast smell.

Interesting... it should not Taste like yeast at all... my pineapple with this recipe smells like pineapple and has pineapple taste. Did you backsweeten and use redstar yeast. Sounds like there is leftover yeast in wine but as ages will most likely taste much better too.
