I took Ben's tip about aging in this video and it really changed the taste of my food! I left my sandwich out in the sun for a few weeks and, wow, did it taste different. Although I have to be honest, I think I may have preferred the original sandwich rather than the aged one. I guess that's just my taste. Thanks anyway guys

A friend of my grandmother taught me to add 1 or 2 anchovies to a tomato sauce to make it extra tasty. She's told me that this is her 'secret' ingredient that she's been adding to her sauces for over 50 years. Try it out, it really does make a huge difference.

PS. re pineapple and heat? If you take very fresh pineapple spears and DIP them in a plate of cracked black peppercorns and then throw 'em on the bbq, they are AMAZING--just like a "pepper steak" only pineapple! The combo of the bite of the black pepper and the carmelization of the sugar in the pineapple is superb. Try it!

Seeing the pineapple made me happy. In Mexico we eat most if not all our fruit with chili, salt, and lemon. And with things like orange we just add the chili and salt. Also our candy is salty, tangy, and sweet all at once. Actually most of our snacks are that way. That combo is magical.

that spice on the pinapple is popular here in Tobago, we call it a chow, we also do it with underripe mangoes and cucumbers but we add garlic, salt, chodo beni and hot peppers

Awesome Umami seasoning recipe: 1part dried Bonito flake, 2 part dried shitake, 2 part dried seaweed. I found this seasoning recipe on a podcast called, "The Splendid Table," about a year ago. I whipped it up in my coffee grinder, put it in an old spice shaker, and have never looked back! One of my favorite blends for meats and proteiney vedgies meals. It's perfect on mushrooms, beans, meats, and for when I get a little hap-hazard on over spicing. Y'all should give it a try!

I just found it today! It just opened up at the basement of sun plaza at sembwang. Its at the north. It only has quesadillas, kebabs, burritos and burrito bowls. It's like subway for mexican/turkish food.

Umami was found on a algae named KOMBU (monosodium glutamate) but seaweed is made of Nori so its not the ultimate umami flavour, because they are different species, but I really liked the video guys

That's why salt enhances desserts. And vice versa for sugar and salt. That's why BBQ sauce is sometimes overly sweet yet it is tasty.

In Vietnam we make this dip which is make of chilly and salt, mix togehter in a mold and pestle. We use this dip for sour fruit like pineapple, green mango, guava... It is very nice, you should try @SORTEDfood

You can add butter to counter ‚sour‘. I actually add angostura bitters to stuff like tomato souce. It works so well, it can make dishes boring. So be careful.

my mom adds salt to watermelon. I tried it but I didn't like she likes it though. not sure why. when making gingersnaps try adding crystalized ginger into the mix, it adds an extra bite and they taste amazing warm. warm spicy ginger snaps.
