Looooveee it! I had no idea you could buy Hai Di Lao soup bases.!!
@Alderic. Жыл бұрын
yup they're great albeit quite expensive, usually almost 50-100% more expensive than the next best option.

@@Alderic. I usually use Little Lamb.. But.. visited a local Hai Di Lao & their broth was much better.. as was their service!

Hi, what's the temp and duration to roast the tomatoes?
@Alderic.2 жыл бұрын
hey there! I would use 180C for about 45 minutes. you can start checking at the half hour mark. it should be shriveled and slightly brown.

Looks delicious! Could canned puréed tomato be used in place of the fresh tomatoes? Wondering because I have one sitting in the fridge waiting to be used in some way 😅 thank you!
@Alderic.3 жыл бұрын
I've never tried before but I would think so! I think this recipe really brings the tomatoes to the forefront, so how good your tomatoes are would directly impact how the broth would taste.

anyone actually tried this and how does it taste?

Uncle Roger: No MSG?
@Alderic.3 жыл бұрын
hmm I think I put MSG in this. it's a good addition if you're not using high quality tomatoes, since MSG is naturally found in tomatoes.

hahaha I actually think how much water to add might be useful to some. I've been to a couple of steamboats where people are not sure how to use the soup base packet :P
@helkel4 жыл бұрын
@@Alderic. That part about adding how much water in your video is actually quite thoughtful! Its probably going to be (for those that need it hahahaha) like something that you didn't know you need until you got it lol. you mean home hosted steamboats? I have never been to HDL tbh so not sure if they also serves this same packet mix there. Oh btw did you keep this soupbase in your vid after using it for steamboat? Is there a way to make to less salty/oily so the soup can be used? Hmm
@Alderic.4 жыл бұрын
@@helkel yeah I've been to a few home hosted steamboats where they use this packet but add too much water then it's super bland haha. I think it's easy to overestimate how much 1 litre is especially when you need to refill the soup base. the version I made was quite neutral although I would recommend adding more MSG and oil if you want it for steamboat. the HDL one, I mixed into some of my own soup base so that it's more drinkable haha.

im gonna add 1 tsp of Aji No Mo To / Ve Tsin 😂😂😂 it will be perfect
