PRO TIP I like to freeze a package of firm tofu the night before and then defrost it before cutting it up for hotpot as usual. It gains a nice spongy texture and soaks up WAY more broth Also I often use my 2 liter rice cooker for hotpot since I live in a tiny apartment. It's serviceable but because of the small volume and verrry limited heating settings temperature management is a HUGE issue, especially when I add ingredients

The hot pot is a great way to socialize. You don't need any fancy equipment and you don't need to cook things ahead of time, especially not vegetables. It works best for a small group around a small table; after a few minutes I could understand Cantonese!

Erm it's pretty common to eat vegetarian in Asian countries. I'm from Malaysia and the vegetarian / vegan / plant based food we have in Malaysia that I know is Chinese vegetarian and Indian vegetarian. I think I know that Adventist Hospital Penang do serve vegetarian as well and I heard about their delicious bakery food. Vegetarian food in Malaysia basically are pretty easy to find, especially Chinese or Indian descendant populated regions especially in the states like Penang and Kuala Lumpur. Not sure about other states since I'm not that familiar LOL

Hotpot is always the best and easiest way to prepare dinner for a group of family and friends. Just have to prepare a simple soup base and prep the ingredients. Heck you can even ask guests to byo some ingredients. There's something for everyone and uncooked leftovers can be kept for next day's meals.

When I make Hot Pot I use my electric Fondue set for it. I don't make two soups, just one, so it's no problem to only have one pot and since I can take out the skewerholder it has for Fondue, it's wide enough.

If the ingredients are kosher, its kosher. For most dishes without pork, there is no real problem unless you are very strict with the rules and also keep it for vegetables.

Well i actually worked in a kosher Chinese restaurant where the chefs would make anything they wanted for their own meals, including a special Chinese new year staff meal that they served after the restaurant closed. So one thing they would make was salt and pepper ribs made with veal ribs. Really good!

I made hot pot for my partner and I last night for our thanksgiving feast. I cheated and use a soup base & can confirm the instant pot on our coffee table works swell. I use the sauté function and turn it off as needed to adjust cooking. I’ll be trying your homemade soup base next time we enjoy hot pot. :) Thanks for the tips! Would the addition of 紅棗 and goji berries or other medicinal/herbs to the soup base be acceptable? What do you recommend?

You can add anything you want. Ordinarily I think that medicinal ingredients are not added, unless there is a sick person. A person who needs medicine does not have to share it with other people, and the hot pot is a social occasion.

It’s actually very typical to use ingredients that are considered medicinal in Chinese soups. The two I named in my original comment are the ones I see most commonly in hot pot. Medicinal ingredients/herbs are used on a regularly basis to maintain health and not only used when someone is ill. I wasn’t recommending you turn hotpot into a healing meal for the sick 😂

I think it will taste good if they are matching to create compatible flavour together. Red dates and Goji berries has their own very distinctive aroma and some people really hate the smell and the taste; 100% any red dates or Goji berries will adulterate the whole pot and you won't able to 'clean up' the smell and the taste unless you finish up the whole pot, wash thoroughly the empty pot and to make a brand new one from the beginning, again. And please please please, to put Goji berries when you are ready to eat all of them. Overcooked Goji berries taste really disgusting LMAO

Because you do not have enough cooking time to soften the shitake mushrooms if you throw dry shitake mushrooms directly into boiled broth. Dried shitake mushrooms require soaking. It is different with western cooking style.
