I have followed your cooking for a few months and I just want to tell you, my Puerto Rican husband loves me more because I've followed your cooking recipes! The accupulia was like heaven! Just wanted to share that you can now buy grated frozen yuca. I found it at my local supermarket. Also, I use cheesecloth (I bought mine at Walmart in the sewing section) to wring out the water from the yuca. Just place the cheesecloth inside a colander and let the water drain out of the yuca. This is just a suggestion - it works for me. Thanks!

+The Freakin Rican Restaurant There is a cheaper alternative to the Grandma Ann's grater which would run @ $280 with additional grating and french fry discs at QVC made by the Kitchen Aid company 13 cup Food Processor. Savings $90. Isn"t the Yucca core fiberous Derrek? I didn't notice if you had removed the cores in the presentation. I like your Sofrito and Meat for pasteles recipes and will give them a shot this weekend but not as much in quantity. Perhaps half the amounts you suggest. Question for you what was your yield total for your Pasteles de Guineo Video? Maybe 100..more, less?

This is a great grater although expensive but I think worth it. I wish it was around when I was younger and healthier. I had a stroke and don't make Pastelles anymore and have no room for it in my home. But for those that need a great grater this is great.

I just love all your videos, wish i could eat your food. I have never eaten Yuca before as I am from Hawaii. I was reading about it and noticed you tasted the Yuca. It says it is very dangerous to eat the Yuca raw . Not sure if there are different varieties, just wanted you to know . Aloha

Sorry, couldn't hear how long. And two, what's a good substitute for achieve oil because where I live, can't find the achiote seeds. i was thinking sazon with achiote.

I love the yucca pasteles, I'll eat the regular ones too but yucca pasteles are the bomb, another thing is I don't squeeze all the milk out of the yucca I've seen videos where they remove the milk out of the yucca just to add a can of carnation milk hum I think that defeats the purpose anyway to each there own,be blessed everyone and enjoy your pasteles. Oh one more thing don't just make them for the holidays .

The starch in the yucca milk will make the pastele gummy and hard after boiling.

Did you know that sofrito should be frozen every time u use it because it loses it flavor and potency. At the same time after a few days it becomes fermented.

Not everyone uses milk in their masa. What's the purpose for the milk? I don't get it. Also, the flavor comes from the meat filling as opposed to the masa.
