I wish I had seen this last year. I was given a great deal of garlic and tried to dehydrate some, preserved some in oil and some in vinegar, but could only use so much. I had no idea we could use the 'paper'. If another windfall comes my way, I will certainly do this.

Dr.William Li talks of the high polyphenol quercitine in onion and garlic skins. Since I heard I put them in the freezer and ɓoil them up with carrots, celery and onions when I make veg stock. I didnt think they would grind to a powder...so excited to try this. Quercitin is said to be a great cancer prevevtative, helps arthritis and bladder infections. It is really expensive as a suppliment so this is a great idea.

I saw a dude once use the skins of onions, garlic, carrot, etc (not potatoes) and dried and created a simple sprinkle of stock powder for the future. He added salt and pepper, etc. Ultimately it was very cheap to make. Without a dehydration unit, he just put the stuff in the oven on low or when he'd turned it off after baking. Cheers 🇬🇧

We’ve been watching a British couple eating their way through Texas on yt. My husband asked me tonight about getting spices in the UK. In the US we have international sections in the grocery stores. All I can think of now are Mexican and Asian sections. The couple in this program really enjoy Tex-Mex food. Do y’all have access to some of the foods and spices we use in the US to make these foods? We did notice when they were recreating some of the recipes they had a bag of tortilla chips that seemed quite pricey.

Great idea Ana. I have so many herbs, comfrey, spinach and broccoli to dehydrate it all gets a bit overwhelming this time of year. My garlic wasnt huge so I made paste and froze it. However, I will be buying organic garlic to dehydrate and powder before winter. It always has a different taste to dishes doesn't it? More umami I think. What is your food processor Ana?

Thank you. I made paste last year but it took so long to peel. Yes it does add great flavour, love garlic. My food processor is SAGE by Heston. Highly recommend it!

Looks good. I bought my dehydrator because I was managing to get lots of yellow sticker items for next to nothing - so I would dehydrate them. I don't tend to see so many these days.

I use a coffee grinder but It takes longer with smaller amounts. I made cream cheese from stale milk and lemon juice, I'll try to dehydrate it to cheese powder next time

I dehydrate cheese all the time. The only way to keep it from getting rancid is to put cloths or paper towels under it to absorb the oil, plus you have to change it a few times,(which is why I opt for paper towels), but I have had great success.

It must of been around 100 heads. I had planted 400 sets on allotment last year but gone through a lot of it, but people dehydrate what they have, quantity is not relevant as such

Ana, Roughly how many / weight of garlic bulbs did it take to fill the two jars ?

Sorry yes I should have said . I think it was roughly 100 bulbs. I have planted 400 last year at allotment , roughly 1/4 was left give or take
