I Love me some zucchini bread! I just made me some zucchini bread and muffins. Sometimes I put nuts. Sometimes raisins. Sometimes cranberries. Sometimes chocolate chips. I add applesauce to my mix. It makes the bread very moist. Thank you for sharing your recipe. I will be fixing it like yours real soon. Btw coconut is good also in it. Theres sooo very different variations of ways to make it. A friend just gave me a huge zucchini out of there garden so I will be freezing it. It freezes really good. Be blessed Mommy, Deddy and Sasha.

Delicious recipe! Mom looks great in her pixie cut! Just FYI..leave out the liquid mixed essence if you have a nut allergy as it usually contains almond essence. I always substitute 1/2 the amount of oil in cake recipes with unsweetened applesauce to make it a little healthier. Does not change the flavour and keeps the moisture. Simmering the raisins in 1/4 of rum will also hydrate them and infuse the rum flavour
