@Steve Thanks so much, Steve!!!! Sadly the peach truck sold out soooo fast this season. I went on their very last day in town (I was out of town for the week before) and there were already about 100 people in line and that was about 45 minutes before they were officially supposed to open! I was only able to get a half of a box (shared with a friend) earlier in the season. I didn't can any peaches this year, but that's ok cuz I still have some from last year.

Hi Mandy! I'm so glad that this video helped you with all of your peaches. Wow, peach trees - what a dream! What have you been canning so far? I haven't canned anything yet this year - only made some freezer jam. If you like jam, but don't like all the sugar in most jam recipes, I highly recommend Pomona's Pectin! It's a pectin that allows you to use a much smaller amount of sugar or honey, plus you can waterbath can it or freeze it (and it's really delicious!). Also, if you have a lot of freezer space and don't want to go crazy with canning, I'd also highly highly highly recommend Souper Cubes. I did a video about this product about a year ago and they're phenomenal! I use them for freezing soup, pesto, lemon juice, etc. Hoping to find about 20 pounds of sweet red peppers soon to make roasted red pepper soup for freezing, along with at least 20 pounds of tomatoes to for freezing tomato soup! (I love canning, haha, but I don't feel as motivated to do it now as I did a couple years ago.). I'm also searching for a pick-your-own raspberry place because raspberry freezer jam is soooooo delicious! Anyway, congrats on the garden and peach trees and canning!

I split a box with a friend and they're soooooo good, aren't they?! I'm going to buy a whole box when they come around later this month and can them! You went to Tree Ripe, right? They're awesome! (And just for your info, I ordered their mixed pears last fall and a box of apples - the pears were great and I'd order again. The apples were fine, but nothing outrageously different from what you can get in the store. Their pistachios are also excellent, as are the pecans! AND this spring they had organic Meyer's lemons - I got 20 pounds and they were amazing. I'll def order more Meyer's lemons next season!)

Thank you! So glad you found this tip helpful. It's also really great if you need to have tons of tomatoes peeled quickly (or nectarines or plums, any kind of fruit like that). When I do peach kombucha, I generally don't peel them because I only use one or two peaches, and meh, I'm not motivated enough to get out the whole set-up with boiling water, etc. But for canning, you bet I use it! And thanks so much for your kindness about my fermentation videos! I mainly only brew jun now (I actually just completely cleaned out and dumped my kombucha scoby yesterday...it had been neglected since August and wow, there was probably a 3 inch layer of scoby on it - last time I checked, there was maybe a centimeter!). I also sometimes play around with kraut. And I made kimchi last year, which I ended up not eating, but just gave it to a friend and she said it was amazing (nice and aged!). I just really like fermentation - think it's so neat! Have you seen the book by Rene Redzepi, The Noma Guide to Fermentation? I checked it out from the library a few months back and it's pretty interesting (didn't buy it, though, cuz I already have so many books and knew I wouldn't do some of the crazy recipes in it). @@crazykenz4203 That is super cool and I will definitely be checking that out too! I actually made brussel sprout kraut for my family just using the 2% salt method. It was awful omg, my whole family was gagging from how bad it made the whole house smell lol! I felt so bad because I am still new to this but they were upset. I have since learned that brussel sprouts are notorius for foul smells when making kraut. I need to try again with cabbage. I really want to try making kimchi too! I am not a huge fan of seafood so I think I want to try with Maangchi's vegetarian version. She's like the Julia Child of korean cooking, shes amazing! I also really want to try Jun. Do you know if I can peel some of my kombucha scoby and use it for trying to make Jun? I bet it will take a few batches for the scoby to adjust at least?

Best way for tomatoes is triming stem end toss em in a bag and freeze them. Meat falls right out, it seperates water, cuts down cooking time greatly.

I will be making peach sorbet. Should I remove the seed before I peel it using your technique? Removing the pit afterwards looks like it will get messy and will lose a lot of flesh. Can I use your method somehow on a peach that would be cut in half and de pitted? How about freezing the peaches after skinning them and then de pitting them? Any suggestions? First time using peaches for sorbet. I have made sorbet from strawberries and watermelon, no pitts to worry about. Thanks.

Hi Michael! Yum, peach sorbet, excellent choice! Do you happen to know if your peaches are free-stone or cling, by chance? If they are free-stone, the pits will come out super easily. If they're free-stone, I'd peel them using my method first, then you just need to slice them in half and pop out the pit (sure, it's a little messy, but I think it would be way more annoying to cut them in half, take out the pit, then skin them). If they are cling, you know, I'd still probably pit them afterwards (but gosh, I'd just avoid getting cling peaches in mass quantities because the pits will cling to the fruit and it's just annoying!).

A dang racoon came in last year and ate them all. My brother got them this year so that's pretty good. I've had peach wine and peach jelly in mind. Cheers!!

Aww thanks! Oh wow, so cool! Ok, so it takes about 7 or 8 years for a peach tree to start producing fruit - good to know! What zone is your peach tree in? Those raccoons certainly do have good taste, am I right?! I made a peach jam last year, but didn't love it, but man these canned peaches, oh la la. I ended up getting 21 pints between my two peach canning sessions...if I am left with a jar of my peaches, I will eat them in one go. SO TASTY!

Hey There!! So I got the first peaches like 3 years ago. Plus I think peach trees produce for pretty long perhaps about 10 + years. Not sure what zone im in but I got the Contender variety from stark bro. It was listed for my zone. However this crazy tree had two main trunks coming out of the base. At the time I was prepping to go to AFGAN so I had to go with it. One side of the tree don't produce nothing... DANG!! PS I HATE ME A DANG OL PESKY PEACH TREE BORRER!! Moving to the country gonna eat a lot of peaches... Hey if ya could dance to that song it would be cool... Ok I'm shuttin up now... feelin crazy.. out here way way to long.... @@crazykenz4203

Oh man classic song there - for some reason, I have an image of being in 4th grade whenever I hear that song! Thanks for all the peach info. I know there are varieties of peaches that can be grown in colder climates. Once we finally are in a house, def need to think about what fruit trees to plant (and which ones to grow in pots inside - def need a Meyers lemon tree again - had a real beauty in CA, but it didn't survive the journey to WI). Definitely want a few apple trees, maybe some pears, figs would be cool, too, if I could find a cold-weather variety, peaches, cherries...looks like I need a lot of space...

I found that peaches take about 3 minutes - and these were very ripe peaches. Not sure why mine took so much longer. Took me 1 1/2 hours just to get to the point of peeling them (30 of them)

If they are free stone peaches, you should be able to just slide a knife around the peach and the halves should pop apart, then you can just pull out the pit. Cling peaches aren't like that, so make sure you know if you are getting freestone or cling peaches.

The first 2 peaches i got, they peeled wonderful. The next one I left in the hot water for 15 min. and it never would peel. So I had to throw it away. That's why I hate to buy peaches, some peel and some don't. But boiling water does not alway peel peaches,,,,,,,,,,,

Yup, most recipes for canning peaches will have some type of sugar syrup (usually with water bath canning, you will need sugar, salt, or vinegar to help with the preservation). I usually go with a relatively light sugar syrup and I ALWAYS follow instructions from a trusted canning book like Ball.

I only do this method if I'm going to be canning peaches or using them for baking. If I eat them fresh, I leave the skin on. It really is just a quick dip, though, and doesn't cook it through. Once it's cool, it's pretty similar to one that hasn't been dipped in boiling water.

you might want to try it before you call it insane. the peach is not boiled or cooked. only the skin is softened to remove.

You need to think critically. Putting the peach in boiling water for only 90 seconds does not effect the meat of the fruit, it only effects the peel, there is not enough time to actually do anything to the fruit other than to warm it up on the surface. The flavor and texture of the peach beyond the skin and a paper thin layer under the skin is not changed. Remember, doing this in the first place is so you can peel the peach without wasting a lot of the meat of the peach. Claiming that it's insane to do this is, in itself, an unfounded claim.

If I eat a peach fresh, I don't peel it, BUT if I need to peel a lot of peaches for canning or baking, this is the way to go. I would never do this method to peel one peach...
