I was Horseshoe Bend in Mid November 2018 and have almost this same shot, just earlier in the day than you. I was lying on the ground with my body stretched way out with my head and camera hanging over the side (not an easy feeling for someone who is not fond of heights...I got the shot though). Shot with my Nikon D810 and the same lens as you, the 16 - 35 @16mm. Where the sun was at that time of day, it cast a deep shadow on the left side of the canyon wall . I wound up converting the image over to B&W, made detailed adjustments to the color channels, shadow, highlights, contrast and so on. It came out so perfect for me and thats the important part. Whether you like HDR, standard color or B&W, it's up to you as the photographer and no one else.

Can you do drone photography of horseshoe bend?

There is a ban now on drones at horseshoe bend so no you cannot do drone photography of the area anymore.
