I tried this method of preserving a heap of green olives , I scavenged from various olive trees around my neighbourhood last summer 2021 here in Perth. OMG....they are so delicious 1 year later. Thank you Vasili. 💖 Looking forward to doing it again in a month's time....🙆

if you want to try it but don’t have an Olive Tree- help out all the trees grow on nature strip along Maribyrnong Road in Ascot Vale 😊

20 days in water, Vasili? I do three days in hot water and I never score the black olives and have done so for decades and never had a problem. But I jar them for a minimum of three weeks.

Easier to spread a tarp under the tree. Then equip 3 or 4 girls with long poles, to knock the branches, then pick up tarp and let the olives roll into bags.
