Shawn Brisbon, I hear you. As old as I am I should already know this, but I guess I don't. For sure jazz is loaded with 2-5-1 progressions. Pop songs lean more to the 1-4-5 progression, but whatever.......

Definitely prefer the jazz voicing but I know how much that simple version would’ve made the song playable not to long ago.

why do these jazz teachers show that 2 5 1 as being in major seventh for the 1 and even more complicated chords?

That's because most jazz players don't use triads and simpler chords like Dm, G, and C. They may play more extended chords like Cmaj7, and Dm9. This is a big part of what makes things sound jazzy. It's the use of more extended and advanced harmony.
