After watching this channel for a quite a while and given the fact that I'm Spanish, I've been wondering why don't we keep some of this amazing tuna we export for ourselves. Here everyone knows and loves the amazing jamón ibérico but I haven't heard anyone ever brag about the tuna

For me watching Hiro San and another chef Taku from Outdoors Chef Life is like listening to classical music. It's so calming and peaceful and puts me in in a tranquil state of mind. It's better than any kind of meditation, his knife skills are out of this world and has helped me continue to get better.

Always great to watch Hiro’s knife skills. He is very talented. But to be more honest, I must say that when you are privy to all the super expensive product that somehow gets magically sponsored, one has to really try to screw it up. And on another note, why can’t we see Hiro’s loose lipped camera man? For someone who blabs as much, it’s surprising that he’s too proud to show his mug.

Who would have thought... AKU aka (bonito) is a delicacy? LOL. Don't get me wrong because we catch that like bycatch but I love it. The entire sashimi and sushi industry here in Hawaii only buys them at $3 a lb so we avoid catching them. Now Otaru aku.. yes you can googel it yourself... is prized more. But we get only $4 to $5 a pound for those. I prefer Kamapachi, moi and Ahi over all. Salmon comes in close since we cant catch them here. My wife worked for Kamapachi farms so I got spoiled to quickly now i don't eat them at all hahaha
