When I was a child we only got field corn. It isn't sweet. I have been trying to find some for years to make skillet corn like Grandma used to make. Sweet corn doesn't work for me. You cut it from the cob into the cast iron skillet in which you have cooked a slice of bacon and half a small minced onion beforehand. My Grandma added a cup of water, salt and pepper to taste and slowly cooked the corn until the water was all cooked out, stirring so the corn would not stick. This would cook out the starch. She then added 2 tbls butter and 1 cup of whole milk. She cooked that down until there was no visible liquid and the corn would begin to stick. You have to stir and scrape constantly at this point until it just starts to get a slight color when you are turning it. It is then ready to add just enough milk again to get it creamy. Remove from heat and keep stirring until skillet cools down. Cast iron will hold the heat for a few minutes and you don't want it to burn. It was just delicious.Sweet corn is okay cooked this way, but not close to what we had. I really miss being able to find the corn that wasn't sweet.

I know your comment is from years ago, but maybe you'll see it. You might try asking farmers at a local farmers market if any of them are growing dent corn/field corn. Something like 99% of all corn grown in the US is field corn, but very little of it is sold for fresh eating because not a lot of people want it. Most corn stalks sold for decorations in the fall are field corn, but by then the cobs aren't very good for eating. I'm sure you could get some earlier in the season if you asked. What you want is when it's in the "milk stage"

Wonderful! Where I'm from in Mesoamerica, this is the kindof corn we eat. We make all kinds of things with it from a hot cereal we call Atol to a nice snack on the cobb. It's in soups, stews and breads. Boil it in lime water and then grind it up into dough and you can make tortillas out of it. It's in tamales and just all kinds of good stuff. I miss it real bad sometimes. Some "genius" in these United States decided to declare this amazing stuff not fit for human consumption. Field corn, they call it. Cow corn, others call it. It's just corn, people. That sweet stuff you get at the store has no character compared to this. It's not sweet but, the flavor you get ... Makes me hungry just thinking about it! Thank you so much for uploading this. I wonder how in the world I can go about getting my hands on some since you can't get it at stores, markets or anything. I don't think the FDA lets people sell it like that. ;( Closest I got was an Indian reservation once. it was a side dish at their cafeteria. Delicious!

Back in the early 80's I was neighbors with an older coupleThat had a large home garden and they grew field corn to put in the freezer.It was the best corn I ever put in my mouth.They pick,shucked,silked,and cooked it the same day.She always fried fatback and used the grease to flavor it.He knew the right time to pick the corn and it was ....well perfect.Better than any steak!

This lady knows what she is talking about. No corn is better than creamed field corn. Sad that no one knows what that is anymore. It is not sweet.

I live in lower Alabama and have trouble finding field corn. If you have not tried it, it is the best.

Sweet corn is often "too sweet" and doesn't have a good corn flavor. Too much hybridization.
