WOOD PIGEON WITH PEA`S AND CIDER..I take one fresh pigeon,breast it out,then pan fry the breasts and serve it with a fantastic seasonal sauce of peas,cider,bacon and cream,finished with sage and mustard.A spectacular, seasonal and fresh dish,cooked from scratch,many thanks .Thescottreaproject.

It's weird to say, but I'm vegetarian, and have been for many years. The reason being because of battery farmed everything and cruelty to animals. However, I would definitely eat what this man has prepared sans the bacon. The bird was killed in its natural habitat, assuming quickly by gunshot. It wasn't cooped up and fed nuggets of nonsense. He showed what natural food the bird ate. All the food items that he used were fresh and healthy. Great video. Very informative.

Greetings Steve. As an FYI, there is no reason to suggest that the bacon Scott used wasn't sourced from a small, local farm versus large, corporate run factory farms. While I myself am not a vegan, I too am disgusted with the practices and conditions of large scale, factory farming. I hunt annually; Deer, Elk, Moose + geese, duck and wild turkey. What meat I don't harvest to stock in my two deep freezers, I purchase at a local farmers market or direct from local farms after speaking with their owners and seeing the conditions the animals live in. It is more expensive, sure, but the quality is superior, it supports local businesses amd even if an animal was raised for slaughter, there is something to be said about quality of life. Some may be against hunting, but I firmly believe it is a proper and ethical way to harvest meat. I seldom, if ever, buy at supermarkets, save for seafood which is, admittedly, a more troublesome product to obtain, though I am an avid angler. I am however, quite particular in where my seafood was obtained. Always read labels or ask, if buying fresh. Cheers.

steve randall pigeons are an invasive species that were brought to North America as pets and food but as of recently people have thought of them as disgusting but by eating them it is so much better for the environment they are free roaming mostly eat healthy they're perfect

i know this is a old video and you might not see this. BUT i made this to my parents and they fell love with this dish. I added few fresh tomatoes and bit green salad to side just to balance the heavy sauce. I love this dish and the sauce, it is amazing! I did few tries with different seasoning mixes and i'd say that you can put in almost any seasonings and it will still taste great.

Beautiful!! I caught a pigeon at the beach yesterday and I was surprised how hefty it felt compared to a sea gull. I let them go, but I enjoy catchin them with my hands. I had to come to utube to see all the pigeon recipes. I loved watchin your video! Y'alls bacon is definitely better than ours here in the States. I've heard people say that our bacon is fatty and, man, they ain't kiddin!! I'm gonna start lookin for better bacon around here!! Thank you so much for sharing!!

As usual you have produced an outstanding dish. I like the way you prepare it in your kitchen using pots and pans that have seen wear. Realism is key to my enjoyment watching you prepare a dish and educating the public. Thanks for a job well done.

so close! we skewer our dove/pigeon between apple halves slightly hollowed/soaked in a bit of lemon to keep the apples white, and wrap in bacon. either on the bbq, or in the pan. smoked on the bbq with apple wood preferred. cooked very slow/basted with shallot butter. served on a bed of fancy lettuce, you just can't get better! I love your work!

I've been shooting Wood Pigeon for nigh on 40 years and have tried all sorts of ways to cook them, and yes I have done it with bacon. Your recipe is BRILLIANT, I just love it and will try it. As for that Richard Ames' comments, well, I feel sorry for him as he's obviously led a very sheltered life and probably just been weaned. His total ignorance is boundless. He must be very sad, WHY WATCH IT RICHARD? Have you got nothing better to do? I digress, Scott, a brilliantly filmed exercise in pigeon preparation & cooking.

I grew up in Mexico and now reside in the USA. As a kid my uncle and I use to hunt pigeon. My mom would pluck them and cut them in half and would fry them. She also would make salsa out out dried cayenne peppers, tomatillo and garlic and would smother the pigeon once it was cooked. That's was some good eating!

Also, I would pay good money to eat this dish that he prepared. This is definitely a top quality restaurant dish. If ever anyone wanted to eat an authentic English dish then this is it. All the produce is local and fresh.

Wow Scott. What a dish! Also, nice to see your not using fancy gadgets and pans. Just goes to show you can cook this with the pans you have in the cupboard. We bought 2 pigs for £1.50 each from the market. Cant wait to get out and shoot my own!

I shoot, prepare and eat pigeon often thanks to Scott's video's. We've grown accustomed to flavorless chicken so be prepared for something with flavor, give it a try and don't give up if you don't like it at first, it takes time to adjust to real foods.

Fantastic recipe! I shot my first pigeon on my small holding yesterday and did not want him to die in vain. I found your video and have just have just done as you explained (I breasted him yesterday and kept them in the fridge) Absolutely delicious and I managed to keep the breasts rare when cooking. As a side I added some roast chunks of crown prince squash that I grew. Went with the dish very well..... Good video's and well presented - I followed your pheasant one a couple of weeks ago for my first self caught pheasant. Thanks for the advice.

I live mostly on road kill. I can’t shoot, I couldn’t hit a cows arse with a banjo. I have lots of pigeons in the freezer. I will have a go with your recipe tonight. I am a Shropshire lass by the way and also have a flagon of the thickest scrumpy in the county.

You really know how to cook. Love the good ole kitchen stove. I hate to watch cooking shows and all they want to do is showing off their 2-3k stove and others kitchen garbage. I wanted to build a wood burning stove outdoor but it's illegal here. Need to be at least 3,000ft and above sea level here in CA.

Hi Funfrme,when im pan frying them its all ways skin off for me,it looks better on the plate,but if im roasting the whole bird i will leave skin on.One of the reasons i skin them is for ease of preparing them,as you can see,just strip the skin back and you done,to pluck them takes longer,you need to do that outdoors else you end up with more feathers on you,the pigeons revenge i guess,thanks for the comment mate,cheers.

that ryan blokes a "twwaaaaaaaaaaaatttttt" isn't he, ive worked in a food factory and you have to pack different meats together and have to forget about cross contamination, yes you might have put all your food on the block but once you cook it all the bacteria will be killed, really enjoyed your vid scott, thanks.

I agree I've been a cook for 2 years now and have heard the same things. But the people that say those things haven't really cooked haha. They are just going off of what they've heard! But what you hear isn't always true! Cooking at high temperatures kills all bacteria that comes with cross contamination!!

Jacob Linker I too am a cook, but I have researched this topic. The consensus of expert opinion is the bacteria in the board will die before you use it again. If this were not so, we wouldn't be here as all our ancestors would have poisoned themselves. If you want to learn about food hygiene study food storage in countries that do not have refrigeration. The ones that are still alive are doing it right. There's not much you can't safely eat once it's cooked. Including your boots.

Most places dont have a season for wood pigeon/rock dove. It's open season year round in Oregon anyway

I liked how you cut through the skin AND the breast at the same time, after taking off the feathers. It gives you a better grip on the skin when you are trying to pull it off. Never Known So Many Wild Woodies About.....A very underrated meat!

Inspired me to bag a couple of pigeons next week, follow your recipe , made me hungry just watching! What could i use other than peas though? Our lass doesnt like peas at all. Green beans maybe?

Dan Hicks Hi Dan,you can leave out the peas no problem,and like you say, just use some runner beans which are in season at the moment,or a tin of puy lentils,there are nothing like the green and orange dried ones,they would work really well.let me know how you get on,cheers.Scott

Thats it, Im heading out to 56 and 9th in Manhattan to kill me a few pigeons and try this. We have some really big birds up here, also plenty of birds over by West drive, by the lake in Central Park. Maybe the Bacon grease kills some of that gamey city bird taste..Hummm.

In Arizona, common pigeon (not band-tailed) is no bag limit, year-round season, no license needed, any method of take. Hard to go hungry around here.

actually they are fine to eat, they live mostly off of bird seed. they are legal to kill year round. just check their stomach to see what it has been eating before you cook it. I saw it on "bizarre food". I can't imagine they are any sicker than the chicken we get at the store. I would suggest a slingshot since you can't use a firearm in a populated area.

I shot a pigeon last week. I took the breast meat off. as per your video. Boy it's tasty! I am not one for messing with guts and blood. But I found your video inspirational. I had it with salad ;) and new potatoes. A delight.
