How to make Asaana (caramelized corn drink)
Ingredients:
1 Crushed corn
2 Sugar
Method:
1 Soak the crushed corn for 3 day to ferment
2 Boil the fermented corn on the hub for about 30 -45 min.
3 When the foamy substance on the boiling corn is dried up then the corn is ready.
4 Melt the sugar in the pot till almost burnt
5 Pour the water of the boiled corn ontl the melted sugar
6 Use a muslin cloth or fine strainer to strain of the chaff.
7 Allow to cool down.
8 Store in the fridge and serve very chilled.

Thank you for the recipe! I spent 6 weeks in Volta Region Ghana and this drink was purchased for me at the market one day. It was so delicious and refreshing and I've been trying to find it ever since!

Malt has Barley so it is much thicker...this is more like a lighter version made of corn and sugar...

hello Selina, do check the Ghanaian and african markets, or asian shops too. East London is a gret place to check. upton prk, plaistow etc

No dear, they are broken n very dry. Just wash n rince off n then soak for the number of days. Cheers

I am researching the Tarahumara and the corn drink they often consume. Is this recipe adaptable to other sugars? for example honey? Sweet fruit mixes like a smoothie. Is the sugar here purely for flavour? Or is there a chemical process taking place?

I know I'm late but just in case you still need the answer...the main chemical process is in the fermentation if the corn. The Sugar is partly for flavour, on the other hand, it must be boiled until it attains a caramel colour, which gives the drink the colour shown on the thumbnail. But as long as you use enough honey to override the taste of the fermented corn, you are good to go.

Haha , not to worry, no one knows it all. its just the normal corn (dried) but its broken into smaller pieces.

It was already crushed. (ps you can ask them if they have the one for oblayo or ekoebeme)

pls mine tasted bitter. i think to have this colour, the sugar should be dark burnt and gives it a bitter taste. can you kindly help me rectify the problem.

reduce the heat. The sugar should caramelize, not burn.

Good work but just so you know,this is not the original recipe because Am an Evé girl and I know it as this was what my mum makes for us instead of buying us fanta and cook! Ndudu by fafa neither showcased the original version! Again,not attacking Just sharing
