I'd do 1 part olive oil to 2 parts vinegar, sugar to taste plus all your other ingredients & use it on my 3-cheese tortellini salad!!!😋😋😋 Every time I go to make my tortellini salad, I'm out of bell peppers! This would save time because they're already diced & ready to use!!! Thanks for sharing!!!

Thank you for this, not what people want to hear but after post-ovarian cancer complications with obstructions in bowel..I have to avoid skins and seeds and really miss red peppers! So this is amazing, probably (?) not what you intended this video for 😆 Also great for ilestomists/crohn's/cancer patients and will post in my groups. Thanks so much!

Best recipe for oil Preserved Roasted red bell peppers. I wonder if there is a way to sun dry those peppers then preserve them in oil, but without the skin. Thx for sharing. ❤❤❤ I definitely going to try. Need to find when they are in season, here in South Florida

Thanks for the kind words, I'm glad you like it. It would be a great experiment to sundry them before preserving. Peppers are fairly easy to grow indoors all year.

You can close the peppers on a paper bag for them to steam. Works very well.

Hej! Yeh almost certainly. I have never tried it. I would guess that the final product will have a little more tang than with riper red peppers. You should be able to tell by the smell out of the oven/grill. It'll be a treat I'm sure.

I'm a diabetic.. can I can these without the sugar? Or is the sugar needed to make the peppers safe for shelf storage?

The way I do them, is without sugar, they last many weeks, they are good. I put, white vinegar anger,some water to reduce the strong flavor,, garlic, parsley and olive oil, it have to been sumerge i the oil. I don’t keep in the refrigerator, cool, dark place. You can enjoy with crackers , with cheese On bread. The ones that I preserve for longer time I do it in water , and I can’t them. , hope it helps you

You don't need to brine them at all. You can do all of the steps aside from brining, place them in a jar with garlic, fill to the brim with olive oil.

Hej, I can not be certain as I have not tried it. However I do know that the pre cooking, or grilling process helps to kill off anything unwanted to start, but also remove excess air that get trapped in the flesh of the pepper. Hope that helps.

Looks delicious. On a personal note, I have a background in medicine and as I was looking at your eyes, I noticed something that most people would not have noticed. You might have a hyper active thyroid. There are some fairly new medications that can not only help your thyroid but can also reverse the effects on your eyes. You may want to ask your doctor about them and see if they are right for you. The longer you wait the more damage to your eyes will happen. You are a handsome man, it would be a shame to let it go.

not everybody uses sugar. look at other recipes. sugar is not necessary

I'm confused - One video says that any water in the jar will cause the food to go bad after a couple of weeks. Another video says absolutely do not refrigerate, just store in a cool place. Your method involves adding water (brine) and refrigerating. Can you tell us if your batch lasted more than a couple of months and if they were as good as you anticicpated?

Yes there are lots of ways to preserve a pepper! I can confirm that this method produced very tasty results, I/we ate them before my estimated storage time was up. They kept well for the 3 weeks they lasted in the fridge though.

Please do store in the fridge as I didn’t. I put them in a cool place but it obviously wasn’t cool enough and they went mouldy. I was gutted as I followed the instructions carefully from another recipe.

Oh no, that's not good! I have them in the fridge thank you. I think i have the opposite problem, in that my aging fridge is a bit to cold. The olive oil has almost set. They are a tasty accompaniment all the same. Will you try again?

Sugar should not let that happen.. I tend to believe that the problem was air inside the jar..If you dont vacuum close the jars, then it must be filled completely.
