I did this with cherry tomatoes, and they lasted a year in my fridge! Also did it with sun dried tomatoes. The leftover oil after tomatoes were gone had so much flavour. I just harvested a bunch of peppers and am excited to try it with peppers.

@@BecomeInspired so off course I sort of started by memory - oh it was not right, I did not cut the peppers first and take the insides out; oh well do it back wards. Worked. I had three long red peppers left from my daughter who had them from a friend and when ever I had eaten one raw they were mild, here and there a bite of hot. When I peeled them and took the seeds out I tasted a piece: heat!!! Keep separate from the bell peppers or the hubby will kill me! So far so good. Parts I added to my tomato sauce, the hot ones I put in oil with some bell peppers. Then I did dishes AAAAGHHHH my hands are still burning LOL I just think how it will keep arthritis away...... :) all is well!

@@BecomeInspired you said to let you know :) I try to not forget to give people an update - especially if it takes me over a week to actually make something - next year I know better: slice and clean the peppers first; come to think, I still have a box of green ones sitting in hopes they turn! So if I don't do a quick cut them up and freeze them..... my jalapenos are turning red as well, they came in much later than the bells; they get dried and powdered, so I can spice up my meals :)

This is wonderful. I once did the same thing with green peppers, but added a little bit of vinegar also and but put in a water bath on my canning jars. It lasted for months, but after that, the got this bitter taste. It was still edible, but I wished it hadn’t. I used the same recipe for eggplants and they were fantastic.

Thanks Ashley for share this wonderful recipe! Few days ago I tried it and the only difference was that I roasted the whole peppers and added roasted garlic cloves, dry oregano and dry basil. Everything was fine but few days later I noticed bubbling oil, it was leaking slowly. I wonder what went wrong, any advices? I've been thinking that maybe I didn't dry the peppers. I don't know. Great job David! You have to make sure they're totally dry. The bubbles are the moisture that was left in the peppers.

Thank you! I'm used to doing this with corn oil and putting them in the fridge. Using olive oil and keeping them for months at room temperature would be much better for me! So, I tried your technique today. When roasting the peppers on the grill, how can I tell if all the water has come out of the pepper? How can I tell when the pepper is done roasting? Some of my peppers may have been over roasted and some still felt wet when peeling the char off. Thanks again!

After roasting it, put it into a strainer to have the liquid come out. Just make sure the oil is covering the peppers too. Check your previous comment too, I responded there as well. You're very welcome!

Came across your video today. One question how do you get all the water out of the capsicums? I'm putting the strip's onto paper kitchen towels right now, seems to be working. Do you add chopped raw garlic or does it have to be roasted? I haven't got a glass container, is plastic ok?

Paper isn't a bad idea. I try to dry them as best as I can. Chopped raw garlic is a great variation too - roasted or not is fine. I do prefer glass, but plastic is fine too. Keep in mind, it's best to use plastic without BPA.

These last for a few months! Just make sure you get all the water out in the drying process. If you do a really good job with getting the water out, they last much much longer

That's a great question, and the reason I wouldn't is because vinegar has some water in it, and the preservation process doesn't do well with water.

Hello! You need to make sure of two things. First, oil has to cover the entire thing. The oil prevents any air from getting in. The second thing is, it had to have been completely dry before submerging it into oil. You have to make sure the peppers are dry before putting it in oil. Putting salt on it helps extract the water, which is why I salt the peppers in this video.

I have some suggestions, You take water in pot ,keep cleaning your hand while cleaning skin of 🌶, clean only your by diping inside water. Peel will flote on water. We clean bringal skin using this method to cook recipe bringal chokka....local name of recipe. It's very delicious. Pepper will be extra clean. Crush the garlic, do coating. After that...... You dry Pepper 🌶 70 percentage. ... After that you take oil in smaller quantity and toss the Pepper 🌶. All 🌶 will get coating of oil. You sterilize jar in oven. Keep it at room temperature. It's a dry peeper, coated with oil. You sock in water before use,if needed. It will remain for longer time, try it. Jay bharat.

You don't store them in the fridge. The pantry is fine; nothing will happen as long as there is oil covering it. It will last a long time. I've had these sit in my pantry over a year.

Hello! You can use bell peppers of all varieties, pick your favorite. As far as garlic, as much as you prefer. Some people won’t put any but I love lots of garlic. It’s really just to taste, and not a part of the preservation process for the peppers. Enjoy!!

This might happen if there's a bit too much oil. Not a problem, just wipe the jar.

We can experiment another method. First you cut it into four pice, remove seed and collect it. We can use seeds . Second After cutting, steam it for 10 minutes,till you are able to remove skin from 🌶. Third. After steaming and removing skin, Put garlic and vinegar. Marinate for 30 minutes. Fourth. Dry it only 70 percentage same as dry fruits fig. Fifth. Add oil and toss it. Vinegar will help to stability of pepper 🌶. Sixth. Keep in air tight container or in a glass jar. Jay bharat. Jay bharat.
For commercial company, they must sell dried flack without oil tossing, company must give instruction on label to put in oil at your home. Commercial company should not toss in oil. Commercial company Oil products gives heart burn because oil becomes older. I don't know reason. In home people can use oil of own personal flavor. Jay bharat.

More importantly than covering the whole thing with oil, you MUST remove all the water from the vegetables. This is the most important part; overlooking this WILL cause spoilage.
