When drying scotch bonnet peppers you cut off the fruit off the pepper leaving the seed and stem. Then you place these seeds in the sun in a container to dry. Do not let the rain fall on them or cause them to get wet.

ensure you pick your peppers when they are dry, transport them in onion bags to make sure they are well ventilated. when the peppers are been transported ensure they are cool, not locked up in a hot vehicle and they will be fine
