Those locks use PD cylinders so you can set them to restricted keys as well?

Yeah you can . PD cylinder support mt5 keys from Lockwood which is a restricted key system.

I bought a rekey kit and the labeling for the pins are complex with different lock manufacturers and decimal numbers... Is there a guide to the specific keys/pins to use that'll match the decimals to make the process simpler?

Check the key and pick one, if its high replace it with a smaller one, if its low use a bigger one
