How to Remove a Venison Hindquarter | MeatEater Butchering Ep. 3

In this video, MeatEater Producer Janis Putelis runs through the procedure for removing a hindquarter. The hindquarters of a deer, also known as hams, contain a large portion of the total meat and some of the choicest cuts. It’s where you’ll find the sirloin, round roasts, eye of round, and others.
