warm up the engine before removing the cover. It makes the fittings more flexible allowing the cover to come off with ease.

i have a 2014 vw jetta 1.8 t, and i live in Louisiana where its never really below 30 much, is it okay for me to take the engine cover off and just have it in the car for the colder months? its under the sun a lot so i just worry the plastic cover is doing more harm than good. thanks for the video!

Yeah totally That's one of the first modifications people make is put a performance air filter system on and get rid of that hunk of plastic under the hood. amzn.to/43biOBH (paid link) I would definitely consult with a mechanic though who's installed one before.
