You should have left thermostat out and poured in engine /radiator flush and run it awhile. You be amazed what comes out.

why would you have a bimetallic thermostat when these engines have block mounted temperature sensors that doi the same purpose?

The thermostat controls coolant flow by opening and closing thus keeping the coolant temperature within range . The sensor just reports the coolant temperature to the computer so it can provide the correct amount of fuel at the given temperature. It does not control actual temperature of the coolant.
