As the rear brakes have the handbrake mechanism as well, the pistons should be wound back in using a disk brake wind back tool. They are inexpensive and ensure park brake/piston mechanism is not damaged. From memory, one side winds in clockwise, the other winds in anti-clockwise. IIRC , the pistons are wound in in the same direction as the wheel rotates when the car is moving forward Torque values from Alfa workshop manual: Disc retaining bolt 10 to 15nm. Caliper bracket to hub: 54 to 60nm. Caliper to carrier (the sliding pin retaining bolts) : 27 to 30nm. Blue thread lock (hand tool removable) on bolts after old thread lock cleaned off.

You can buy a proper tool for retracting the caliper pistons for not much money. The method you are using is likely to result in damage to either the caliper when you try to force it in, and damage to the rubber seal from the wrench as you turn it.,
