Perhaps a silly question from me? Do you eat the whole seed with the shell, or just whats inside the shell? Thank you for your tutorial.

It's not a silly question at all. I eat it like I eat sunflower seeds. It's tougher to crack open, but yeah, I throw it in my mouth and crack it open with my teeth, then spit out the shell. The shell will be coated with the flavor of whatever seasonings or sweeteners you use. You could also just crack it open with your fingers, then eat the seed. I don't eat the shell.

@@Grubanny Thank you for your reply. Perhaps I roasted them to long, as almost impossible to crack the shell without destroying the wholeness of the inner seed. My best experience is to bake the whole oiled squash, then the inner seed is easy to retrieve in its wholeness state.

I'm doing a Ginger & Butternut Squash soup from the instapot book and it said add roasted squash or pumpkin seeds as garnish. Recipe is on point dude.

@@Grubanny one question, when you say dry overnight. Do you mean on the counter/in oven obviously off, or in the fridge? And did you leave them on the towels?

@@pikasnipe1 on the counter is better. The current season (winter) is really good for drying stuff. Yes, I left mine on paper towels. The paper towels will absorb all residual liquid/moisture.

I love Egusi Soup! I believe you can. The seeds are similar in almost every way. The only thing is, you'd need a lot of seeds. That would mean a ton of butternut squash. It would cost you way more than buying the actual Egusi seeds or even the ground seeds from an African store. Usually $6 to $10 per pack depending on where you live. Also, butternut squash seeds are a little tougher and difficult to crack open.
