Rather than soaking the nuts in a bowl of water....after I slice open the nuts as you do...I put the nuts in a pot of water on the stove. Bring to a boil and let boil for 15 minutes. Then drain hot water and continue , as you do with cooking them in the oven. I find that the boiling water, helps the nuts open up and the water adds moisture to the nuts. Been doing this for years.....Unfortunately the quality of our nuts have not been so good , slim pickins!!

Any idea if I can roast them in airfryer? My airfryer substitutes my oven these days. I am assuming oven method/heat work for roasting chestnuts as well.

I always struggle with the membrane - it always sticks and can never get it off. Any advice? X

The best way to maximize chances of the membrane not sticking is to follow all of the steps in the video. Be sure to cut through both the outer shell and the membrane when you score. Then the membrane more easily starts popping off with the shell as the nut expands during cooking. If the shell and membrane are dry enough when you peel, it's more likely to pop away easily. There's still no guarantee, but comes off easily most of the time. Hope that helps and buon appetito :)

I have my own method of making the shells easier to peel off. After cutting half of the skin, pour them in with a bowl of hot water and cover towel on. Let it sit there for 30 min or until the water have cooled a little bit before putting them in the oven or on a pan. That way the shells should easily come off.

So, there was a chess competition. The chess players all gathered in the large foyer. The doors were not open yet so, they started boasting about how they would easily win the tournament. The boasting got really heated and it became a bunch of chess nuts boasting in an open foyer! 🤣😂🤣😂

Hmm..., this shows big Japanese style chestnuts. What if, like us, you have an american hybrid chestnut. It is a great producer but the nuts are MUCH smaller. Have you tried any of those or have a recipe for them. I am sure that "chestnuts roasting on an open fire" referred to the small Amercian chestnut.

Hi Stephen: The larger chestnuts we used are actually the classic Italian 'marrone' chestnuts. However, all of the strategies we've shown in the video work just the same for the smaller chestnuts.

They are good. Remove the fury skin. Sometimes you get rotten chestnuts or with worms but that is easy to see once you open them. The chest nuts in the video, probably, were picked one by one to look very good in it, I doubt you can go to a market and pick them one by one; you ask for a kilo or something and they put it in a bag and in that mix you will get some bad and if they are crooks you will get lots of bad ones.

I love chestnuts but not roasted . i like them cut then put in to a dish with an egg cup of water put in the micro wave for 4 mins then pour out the water add a bout 2 oz of butter and some pepper then microwave for 3 mins stir them and leave them for 2 mins to cool down then scoff the lot . roasted chest nut are not nice and they taste burnt and are too dr

I tried your method, they came out nicely. Thanks I tried another method just sprinkle water and microwave 2 min. Flavours are much intense.
