Hello, this video was designed to help you choose the correct cooking mode and rack position for roasting vegetables in Convection. As a rule of thumb, allow approx 30 minutes for potatoes, 40 minutes for root vegetables and approx 25 mins for cauliflower. Brussels sprouts and mushrooms need about 15 mins and broccoli, kale and asparagus need approx 12 minutes. These are general guidelines but remember the cooking time will depend on the size the vegetables have been cut to. I hope this will be helpful. Larissa
