I've been sick the past couple days and I totally binge watched 8 of the videos in your cake biz series! Wish I would have known all these amazing tips and advice a year ago when I got my cottage food license. Tell you what, I've already made most the mistakes in the book. Ahhhhaha! Made cakes before customers paid ( that only happened once...changed my policy right quickly after that.) stay up hours into the night, refunded deposits even though I'd already started a cake. My husband says I need to charge more Lol!!! You name it! Thanks to your biz series...NO MORE! God has blessed me with an amazing talent. I'm going to grow a low stress business from here on out. Very helpful video today! I was one of the ones that would be up all night completing orders. I work a full time career as well as make cakes. I started planning out my week to avoid being up all night decorating cakes. To prepare for weekend orders I do something every day. For example; on Monday I'll make decorations, Tuesday I bake cakes, Wednesday I make frosting and crumb coat, Thursday I cover cakes in fondant and decorate, Friday I do finishing touches and Saturday morning by 10am is pickup time. I do all of these things when I get home from work.

HI Louda and Arnie! I just wand to post my startling results of your guide, and its scary! lol :) Ive been doing cakes for about 6 years and as I became more experienced, and really started realizing how much time, money and effort I was making, I was not making anything from my cakes. My results were 62 cents an hour LOL My family and friends have all been telling me im not charging enough, and boy they were right! My last 4 tier wedding cake, with an hour and 40 min delivery time with cornelli lace on one side, and real tree camo on the other, I charged 250.00, I am a changed woman and will start giving myself more than 62 cents an hour lol Thank you Thank you! :)

Thank you for these fun and informative videos. Do you have any advice on how to convince my family to respect my work hours? I am constantly distracted by requests to run errands or even just to chat because if I am at home they think that means I am available.

You are VERY welcome Nancy! Wow... Trying to convince your family to respect your hours is equivalent to trying to convince them to respect YOU. The simple fact that you are "requesting" this from them, should be more than enough. If they are not respecting your request then they are disrespecting you. I know that's probably hard to equate but it's the truth. Sit down and talk to them earnestly and let them know how much this means to you. Tell them that them abiding by your request will avoid conflict or hurt feelings. If they love you, they'll do what you ask. You don't need to convince them. Tell them they can SHOW your love for you by simply following your request. If they don't do it, then there's a deeper issue going on. :)

Awesome, awesome advice! I felt myself becoming very stressed recently with my cake business and I think it was due to the fact that I offered too many services and driving myself into a hole. I love seeing your husband/wife relationship displayed in these videos. God has blessed you both with being able to work together peaceably and maintain a healthy love toward each other. You mentioned Arnie's awesome coffee... what is your favorite?? My husband and I love our coffee, also, and he surprises me sometimes with a special brew when he comes home from work (aren't husbands wonderful???). Thank you so much for sharing your wisdom. Many wonderful people here in our new church sort of forced me into opening a cake business (lots of referrals before I knew what was happening)... but it made me really buckle down and start considering what my time and skills were worth. Your videos were so timely and I have, gratefully, adopted nearly all of your practices and pricing. I heard another cake artist (in a different pricing video) say "People don't NEED custom cakes, they are a luxury item." Hearing it put that way really helped me cement my need for pricing my time because it's true! A luxury item demands SAVING for it. It's not my problem if they don't have the money... my time and skills are worth the luxury price. So, again, thank you so much. You and your husband have been faithfully in my prayers and blessings for HaShem to bless you mightily through your influence and encouragement of others.

We buy the Starbucks breakfast blend and he knows just the perfect amount of Silk creamer and dash of hazelnut and cinnabon to put in my coffee. LOL. Mmmmm.... SO GOOD! It's our pleasure to share what we know with you. That is very true. Custom cakes are NOT a necessity. They are a LUXURY. Therefore, one must pay the price for a luxury product. Perfect video with perfect timing. I'm currently in school full time and very stressed out, super busy (that's why I'm behind watching this video). I have problems with adding fondant to a cold cake. I make my own marshmallow fondant and that itself is stressful because I don't think it makes proper fondant. It seems to sag and perspire and makes bubbles on a cold cake. Do you have any recommendations or suggestions on good fondant recipes? I don't like the taste of store bought fondant.

Thank you so much! I suggest perhaps purchasing your fondant from now on instead of making it. It sounds like that will eliminate A LOT of stress for you. You can order great fondant online. We use Fondx and Fondariffic A LOT, but there are lots of other great brands you can try. :)

You're very welcome Brittany! Love you too and it's our pleasure! We rarely do cake tastings. Only when the client really wants to taste the flavors and only when they want to pay for the cake tastings. Most people don't want to pay our $120 fee so we avoid wasting a lot of time. LOL. No more than 2 people, up to 6 cake flavors, 3 or 4 different icings, and 4 or 5 different fillings. That's it. Nice and simple. :)

It didn't make sense to me because of all the time you have to put into making so many flavors of cake, icing, and fillings. You're very welcome Brittany! We're so glad to hear that! Yes, we've encountered that A LOT with other Cake Artists. Putting the fee for the cake tasting towards the cost of the cake is the exact same thing as giving them a "discount" on the cake! In essence, the Cake Artist is DONATING some of their hard work and money out of THEIR OWN pocket TO the client!? Haha! Why in the WORLD would anyone do that?! It's just BEYOND me! But, it reminds me of when I first started, I used to do cake tastings for FREE!!! I wouldn't even charge! How KRAZY is that!? LOL! If a customer wants to "try" a flavor we've never made before, I charge even MORE. There will be more time invested in "experimentation" to make sure it comes out perfect BEFORE they even taste it. They are made totally aware of the "increase" in $ due to their special request. Most of the time customers will just "pass" (LOL) and stick to our primary flavor list. As soon as you make clients aware of the EXTRE CHARGES, they VERY QUICKLY realize that they REALLY "don't need" their special request. LOL.

I also have a retired husband that is interested in those things as well and I would love the help, but I am not a good teacher and don’t really have the time the patience nor the energy to teach him. I was wondering how to handle it, if orders are not all for the same day of the week, for example if I have one cake due Wednesday and one Saturday. You are VERY welcome! We don't only take orders for Saturdays. However if we have a cake on a Friday or weekday for example, we follow the same "schedule" as far as baking 3 days before the cake is due, etc., so we're not stressing. If one cake is due a few days before the other, we don't bake them on the same day. We don't like our cakes to be too many days old before they are due. Having said all that, the majority of our cakes are due on Saturdays. :)

I love the fact that you have the opportunity to take your time with your cakes, but I have 3 little kids and my only opportunity to do my favorite thing, which is designing cakes is at night when my kids are in bed. But I still manage to have my cakes ready on time and I do things in advance.

Really the only reason we have time to do our cakes stress free is because we require clients to order with LOTS of time in advance, plus we break up the tasks into small sessions each day. You can do the same, even with 3 little kids. Thank you for watching Helen! :)

I just started following you guys since I saw one video now I'm trying to watch all of them. I just started this cake business, I took a class. This video helped me a lot about the stress free!!!! I always stress I have a 8 month old and a 4 yr old keep my self up late sometimes finishing cakes for the next day or even finish the same day!!!! I'm afraid to put a cake cover on fondant on the fridge, would it still be ok? thanks God bless♡

Just be sure the room/workspace you are working in when you take your cake out is very cool and free of humidity to avoid your cake sweating. God bless you too! :)

Glad you enjoyed it! You are VERY welcome! First of all not "everyone" orders small 2 tiered cakes. It's just that up until now, you've "only" had people order small 2 tiers cakes. It doesn't mean they won't. IF you have the time and if you want to, you can of course create a fake or dummy cake that is much larger just for your own practice and for photo opportunities to show that you are capable of making gorgeous large and tall multi-tiered cakes. When you post your photos on social media however, you don't necessarily have to tell the world that it was a "practice" cake and that you only did it to "show that you can do it'. Know what I mean? Nobody needs to know that. Just post it and write a little description on it and include it in your FB and IG and website photo gallery. Hi Laura and Arnie! You, both, have been an incredibly huge blessing to my life! I have a question...it's about the baking ahead of time. I only have a regular fridge to "store" baked cake layers in. It's not big enough to fit a completed cake. Being that I can't do that, would you still suggest that I bake that far in advance? Also, I've never used a simple syrup. Is that just as important in keeping a cake fresh, that's been baked that far in advance? I'd LOVE to be able to bake that early! I hope this makes sense, lol! Again, thank you!!! Lisa Jones

Hi Lisa! Thank you for letting us know how you feel! That is so wonderful to know and it really lifts us up! We also just use regular fridges. We have 2 actually. Why not consider investing in a 2nd fridge so that you can dedicate for your cakes only? You can buy a used one for very cheap. Keep it in the garage if you don't have room in your home. Simple syrup has nothing to do with keeping a cake fresh. It's only for the purpose of moistening it. You're very welcome Lisa and thanks for watching! God bless you! :)

Hi Alicia! You're very welcome! Glad you're enjoying them! If you visit the Cottage Food Law website for your specific state, it will provide you with any permits or licenses you may need to obtain. Some are very lenient, some require a lot. No matter which you encounter, just do what you have to do to get your business going. All of those licenses and permits are created just to get money out of us. :)

Hi Laura and Arnie. I'm a hobby baker by necessity. I have mobility issues and chronic pain, but baking makes me happy! I do sell occasionally and have been enjoying your videos. Even though I only sell occasionally, I realised I've been undercharging big style! I'd love to do more, and was interested in looking at the 'cake schedule' you mention in the video. I followed the link to your fb page, but can't see a 'notes' section anywhere 😖

Hi guys! How do we transition into Wedding Orders, what are the steps, do we deal with the bride and wedding planner? Also, any tips on taking professional pics?

Hi Tessa! We don't do anything different for wedding cakes. We use all the same cake pricing techniques. We generally don't deal with wedding planners. We are usually contacted directly by the bride and groom to be. Best professional pics consist of a solid background or something not too distracting. Good lighting is important too. :)

Great, thanks so much for answering my question. I am now starting and I am wondering if at some point, I guess it will be necessary for customers to visit our home as we do not have a shop? The last minute order is so true. I've had a few of those, from my family lol and at times it got me really annoyed. The worst happened today, a client called me at 9am asking for a cake for later at 7pm! I was sad to say no, but there was no way I could make a cake in that time!

I always have the problem how to determin the size of a cake. When somebody orders a cake of a specific size, f.ex. he wants a cake of 3kg (in my country it is measured by weight not per servings, but anyway, how can I know which pan size to use to achieve a certain weight or size of cake at the end?? Can you help me out please?!!

It's very very difficult to know in advance what a cake will weigh. To charge effectively for your cakes (and to make sure you're not giving away your work for free) I recommend charging per serving and not "por libra". I know that in your country that's how a lot of people order and charge. I've had LOTS of Cake Artists from your country take my cake pricing webinar and when it was all said and done, they ended up giving away their work for free because they charged "por libra". It would be a great idea to start doing things differently. :)

Thank you so much, for this l had a full time job coming home cooking dinner for my son then going to work on my cakes and as a single mum l was burning myself out,so l had to change things,so this Is all correct,but how do l manager to bring in new clients with out it costing and are and a leg in advertising thank you and it dose work as you both say ( Australia)l know God is helping me he is so wonderful,and you are both a lovely couple

You're very welcome Diana! Thank you for watching! :) In reference to obtaining new clients, there are many ways. One of course is word of mouth. Tell EVERYONE you make custom cakes and hand out your business cards to EVERYONE EVERYWHERE you go. Your cakes are your advertisement. With every cake you make you should expect at least one or two new clients. Be sure to give business cards to your client and ask them to distribute at their event. It helps to advertise in your local online business listings. Here in the U.S. we call them Yellow Pages. Don't know what the equivalent there would be. Post regularly on FB and IG as well. Your business is BOUND to grow as long as you to all of these things regularly. More importantly, what you are ALREADY doing is the BEST thing for you and your business. Trust God and always thank Him in ADVANCE for sending you the RIGHT clients. He is your promoter and will give you success. God bless you and thanks for watching our videos!

Once the cake has fondant on it why do you put it back in the fridge? I thought they didn't need to be refrigerated after fondant was applied?

Hi Catherine! Cakes definitely need to be refrigerated. We cover our cakes in fondant an entire day before they are due. Not putting them back in the fridge would mean they'd just be sitting out for an entire day. That's not a good idea. We keep our cakes as fresh as possible, plus the refrigerator controls the environment the cake is in. :)

Hi! Not a dumb question at all! If you go to our FB page, you'll see on the very left hand side of the page is a column or menu. There you can click on Notes. Or, you can click on the "show more" section underneath this video and you'll find the link there. For some reason the notes section is not visible on a mobile device. Please be sure to click on the links from a computer. :)

When you bake your cakes on Wednesday's and you say that you "refrigerate" them, do you actually refrigerate them or freeze them? I am surprised that the cakes stay fresh until they are delivered on Saturday. Also, when you are frosting them on Thursday's, how do you cover them when they are refrigerated? I definitely want to try your stress-free method but I am fearful of delivering a frosted cake that tastes "old".

When we say "refrigerate", we mean refrigerate. Surprised? By the time we deliver the cakes had only been made 2 days prior... It shouldn't be surprising that they are fresh, especially if they are refrigerated. There's no need to cover an iced cake as the icing serves as insulation. My best suggestion to you is to STOP being afraid. Fear will always stop you in your tracks from moving forward and trying new things. Eliminate your own fear by actually baking a cake, icing it, and then tasting it 2 days later so that you can PROVE TO YOURSELF that the cake is STILL in OPTIMUM condition. You eliminate your fear by DOING what you're scared of. Afterwards you'll see it was no big deal and you can move on to conquer your next fear. I hope that helps. God bless you! :)
