Is there a way to save the scanned document as a JPEG image which is much easier to edit than a PDF?

I have the app but I do not see the "save pdf" button in the corner so I can't save it.

So what should I do with original files. I'm trying to make space in my filing cabinet. Lots of paperwork. Should i keep the originals or shred. I do have a printer so I can print and scan to pc.

Is it better to scan to Google drive rather than drop box?

I use both for different reasons. I prefer Dropbox as it keeps backup copies, it's not as easy to move folders, delete or share out access of private information. Whereas, Google Docs are fantastic for sharing, allowing multiple people to work at the same time without conflicts on the same documents. Google docs and files are super easy to share with others. But if I'm not careful, I can EASILY drag and drop a folder into another folder and then can't find it. Large files like my videos are easier to store on Dropbox. So it depends on what you prefer and what you are scanning. I use both. Hope that helps.
