We do the same in Liberia with plantain skin as well. We call it country soda. There are probably other names for it in each dialect. I learned a few new things! I didn't know there were all those other uses as well.

Our traditional soda in Zimbabwe is made burnt corn cobs. After removing the dry corn kernels from the cob at harvest we burn some cobd and use them ash as bicarbonate of soda.

From the eastern part of the country, we use banana leaves as a base before putting the ash. It helps with filtration.
