Duck is not something I smoke on a regular basis but when I do I thoroughly enjoy it. It’s a bit of a process to ensure that fat renders down the best it can but the actual cook is pretty easy. It will take approx 3 hrs in your smoker at 275f, if you want crisper skin which let’s face it is awesome for duck crank that temperature up at the end which will accelerate the cook also.
We stuffed this duck with limes rather than the traditional orange and tbh was beautiful. That citrus infusion into the duck really made that breast tender and enjoyable. A simple binder of honey and soy, then salt, pepper and a signature rub for colour.
Our honey soy glaze at the end was :
- brown sugar
- soy sauce
- honey
- garlic
- apple cider vinegar
- molasses
