I was wondering if you had any ideas for making a duck sausage at home. I'm studying food history and read that in the Jewish lower east side, duck was a common meat used for sausage as a replacement for pork and I wanted to try and make it to see how it would work

Lovely recipe, slightly surprised with how well done the duck was, I've always only eaten duck with a nice pink blush to it, just a personal preference, and I understand it puts a lot of people off medium/medium rare duck because the fear of "salmonella" and the similarities between duck and chicken, but there really is very little risk of salmonella when it comes to duck.

A bit of tape on the vent? I find a small pinch of bread, any type, I use whole meal Pitts because l always have it. Dampen in water and massage into a paste. This is a brilliant vent sealer and can also be used to seal pan lids that go into ovens.

would you need to adjust the amount of time smoking your meats if you were to use more than 2 duck breasts or is the 20min on heat : 10min off heat ratio almost universal? Say I wanted to smoke a whole cut-up chicken, would that still be enough time to infuse the smokey flavor throughout the chicken?

Ben, could you smoke sausages at home using this technique? I've just noticed you don't much talk about how easy clean up is or can be just that it is really important. I imagine the foil makes it easy for this, but I haven't thought about the rest of the recipes I've seen in your videos.

If you don't have a smoker, you can use a smaller version of a set-up similar to what Ramsay builds in this video: kzbin.info/www/bejne/oHPQf4yEfr1goM0 The most important thing is to keep the temperature low by separating your heat source from the cheese and smoking when it's cold outdoors. There are plenty of good in-depth guides to cold smoking, and I would recommend doing your research well before trying it so you don't end up wasting a bunch of time and money. It's really quite easy once you understand the basics.

Ben, if you want to smoke cheap cuts of beef like brisket or pork for pulled pork, what is the estimated time for them to cook in that smoking technique? First and foremost is it feasible to cook brisket and pork using that technique?

If they fit in the pot, I don't see why not. They'd probably just need an hour or so instead of 20 minutes. Maybe more wood chips, too. Not sure on that.

I'm guessing you could smoke the whole duck in a large pan for 30-35 mins to infuse the smokey flavour then finish it off in the oven using a temperature probe. I haven't tried this so it's just speculating, but this method should work. Seen as a whole duck would take a while to cook in the smoker, you could smoke it for longer maybe 40+ mins to infuse more smoke flavour as well!

'How to smoke meat using have you already have at home'. Don't know about anyone else, but I don't have either wood chips or a colander that fits inside any of my pans. Or anything even remotely colander like that fits inside my pans. Would a steamer pan set work instead?

In my experience, spices burn if rubbed on the outside and seared. especially going in a cold pan and coming to temperature. I get better results putting meats skin side down in a hot pan for a short amount of time, taking it off the heat and then glazing it with spices and honey.

Kelly McP duck is great if you have it, it's extremely rich. Otherwise use whatever oil you have to hand, preferably one with a high smoke point.

Yeah you can get high off certain meats. Generally, it's more likely to be red meats like beef and venison that poultry, but duck is quite a gamey meat so you can get quite high
