Peking Duck, Easiest way ever!
Follow me :)
Ingredients
One whole duck
6 tbsp water
6 tbsp honey
4 tbsp Chinese five-spice powder
2 tbsp soy sauce
2 tbsp brown sugar
Salt
Black pepper
Prick the duck all over with a small knife or fork. Sprinkle the duck with salt and pepper. In a small bowl, mix together the honey, water, five-spice, soy sauce and brown sugar. Brush the duck all over, inside and out. Let dry for about 10 minutes and then brush again. Repeat for few times. Refrigerate overnight. Stuff with oranges. Bake the duck at 350F for 45 minutes, then baste with glaze and flip the duck. Bake another 45 min, baste and flip again. Make final bake at 400F for 15 minutes. Let it rest for 10-15 minutes.

When making Peking duck, you should use air to separate the skin from the meat. We use a bicycle pump. Insert it under the skin near the neck, and pump it up.

@@MsArmy00 I'm not sure about that. If you turn the pressure too high, it will puncture skin I think. Also, if you use water, you will have to dry it for longer. Because moisture is the enemy of crisping/ crusting.

I’m sorry and like most of your videos/recipes… you didn’t make even hit remotely the mark on this one……. You absolutely can’t call that Beijing Kao Ya…. Not white shaming but, nope… if your consumers were Asian and this was the staple… you wouldn’t be open for longer than your lease

Is it a different ratio of five spice to sugar etc? I'm interested, I really like Peking Duck, at least how it is where I live, I wonder if I went to Peking (Beijing?) would I find this food? And how different it would taste if I did...

@@esmeecampbell7396 it is poached in boiling water until the skin stiffens up, dried for a few days afterwards to get the moisture out of the skin, then it gets hung into a large chinese tandoor style oven and it gets cooked at different temps throughout the cooking process, it gets basted with a more syrupy kinda liquid. The Skin should look like tainted, orange gold-brown glass. Its one of those dishes wich is almost impossible to reacreate at home. Because even if u have all the tools and the correct recipe it needs a lot of skill.

​@@tenyearsinthejoint1 My guess is that it's a simplification of the recipe for home cooking. In real Peking ducks, the skin needs to be separated from the flesh and then dried from excess moisture. They do this by blowing air into the space between the skin and flesh till it balloon. Another factor is the way the ducks are placed in the oven where traditionally it would be vertical instead of horizontal so that the fat and juices from the duck can fall down instead of pooling up within its cavity or between the skins. Not all houses have the equipment and time to do that. The oven might be too small with no place to hang the duck, not to mention separating the skin and drying the duck takes a lot of time. The traditional recipe requires between half a day to 1 whole day if we include the preparation for the duck which includes cleaning, drying, marinating and roasting it.

@@13gan this isn’t just a simplification. This is so far off that calling it peking duck is just offensive, even more offensive than when you add cream to carbonara. It’s not just the ballooning of the skin to separate it from the meat. It’s the repeated glazing and drying, after which it is slow roasted in a tandoor-like oven, slowly rendering the fat and letting the duck self-baste in its oils. The result is an even, glass-like caramel gloss on a skin that is crispy beyond belief.

这个跟北京烤鸭一点都不沾边,完全是两个东西,北京烤鸭需要风干表皮,然后把鸭子的皮吹起来,让皮肉分离,再送进特定的烤炉去烤,烤出来的皮是脆的,油脂含量很高,适合用薄面皮包着黄瓜丝葱丝,再沾上甜口的酱汁一起吃,视频里的东西和北京烤鸭没有半点关系
