Hello, I did 135 degrees for about 30 hours. It was one from the grocery store that I added a spice rub to. It came out amazing!!!!

Always love your content! I like my corned beef with a traditional flakey texture with the collagen broken down, so I usually cook mine at 180F for 10-12 hours following Kenji's guide. I find, like you mention, that without soaking, the corned beef is too salty. Before I switched to sous vide cooking my corned beef, I used to boil it in a large pot of water to which I would add the potatoes and cabbage near the end of the cook which would soak up a lot of the salty corned beef flavor. So in order get rid of the saltines and still have some liquid to cook the vegetables in, I now add water into the sous vide bag in the form of ice (which allows me to still vacuum seal the meat). There's enough water to help draw out the salt and then at the end of the cook, I pour it all out into a pot to cook the vegetables. I get the flavor and texture I've always enjoyed with the ease and consistency that comes with sous vide cooking. I'm interested now in trying a lower temperature cook for 24-48 hours as you suggested to get corned beef that will slice thin for sandwiches. That's a great idea! Can't wait to try your tips this St Patrick's Day!

Love the idea of adding ice to help draw out water, great call! And definitely give a lower temp a try just to see how it compares...the traditional flaky temperature can be delicious though!

According to wikipedia it is: "Corned beef, or salt beef in the British Commonwealth of Nations, is salt-cured brisket of beef"!

What happens when we handle the tool before 24 hours? Its difficult to take a tool out of service for that long.
