Over the last few days I had a lot of issues getting a the microfoam at a point where I deemed that it was steam wand issue. After watching this video I now understand the science behind microfoam and that helped me fix my issues after following the technique you described here. The mistake that i was making was that i was burning the milk since i like coffeee hot and in that process ruining the whole microfoam creation process.I use the 30 degrees angle technique along with the instinct to judge the hotness of the mug to get a good microfoam.Also since I am using the same mug as you I am able to get the right amount of milk as you described and i see that gives me a lot of room to practice my latte art. I have a breville infuser and I just reread the directions after so many years and I found it helpful that when you turn on the steam wand the light will flash. When it stops flashing you switch it off, within a 5-second period, put the steam wand in the pitcher so it doesn't splash- then quickly turn it back on. When I finish steaming as soon as I take the wand out I quickly purge the wand for a second and then switch it back so the machine will do its cool down purge. One day I'll have a double boiler but until then I found these extra steps useful.

This videos are great. I think the only thing is looking at the level of the milk rises based off the air and different drinks have different levels (foam) so flat white least amount of air, latte in the middle with foam and cappuccino the most foam and highest level of rise after initial steaming

Good tips. I came to KZbin because I am sick of having too much “solid” foam after steaming milk. I can pour a latte but always have a foam ball left in my jug. Anyway, a couple of points - I have never purged my barista express after steaming, yet it has never clogged. Also, I use a dish cloth that I let the wand purge onto so that when the steam starts, I just place my jug under it. No need to turn it off and on again. Some might not like the mess of this, but it’s part of my cleaning routine after using the machine. I use the same cloth to wipe the wand clean.

A suggestion, a long time ago, I worked in a bar. To create a good froth on the beer we would tilt the glass whilst pouring the beer. This is relevant because I use the same method when making frothy coffee. I put the coffee in the cup. Foam the milk as in the video. When adding the foam milk to the coffee, I tilt the cup and lay the milk on the surface of the coffee, to create a thing layer of milk on the surface of the coffee. Whilst pouring the milk slowly straighten the coffee cup. When I start to pour the milk, I keep the tip of the milk jug almost touching the surface of the coffee. This is very easy to do and difficult to explain. The end result is wonderful. I also have a small spoon available, to scoop out the remaining foam from the jug and give a wonderful surface to the coffee. It you know a bartender, ask them to show you. If not visit a bar and watch a skilled bartender, its the same technique :) The end result is a very nice cup of coffee and foamed milk :) Hope you enjoy. Best wishes.

Wow this is such a good tutorial. I wish i saw it a couple months ago. Theres such a difference between steaming on a dual boiler and a single boiler. You do such a great job explaining how to steam milk using the machine that, lets be real, most people actually have. I did use a thermometer for about a week and that helped me get a feel for temperature.

Absolute magic. Thank you for the step by step tutorial. I actually use a Moka pot for my cappuccino and a milk frother. I find the froth from using the milk frother is too fine. Maybe I ‘ve left it too long but generally the consistency is acceptable.

I have a Breville Barista Pro. It doesn't seem like there's enough room to work the pitcher downward if I have the wand in the front, even though I'm watching you do the same thing that I do. I have two questions: 1) since I'm using a Breville Barista Pro and using the pitcher it came with, and pouring cold whole milk to the point where it's about a half inch under the spout, if I pull the steam wand out to its maximum, will that give me the same *angle* you're using? 2)Also how did you modify the steam knob to have that long piece so you can more easily turn the steam on and off? Thanks for the great video! I am using exactly the same machine, but I am getting many bubbles in the coffee shot. It happens in the very beginning of the extraction, so it might not be because of over-extraction. I am not sure if it is because the machine (second-hand) is faulty or the way I use it is improper.

Just tap and swirl them out too. It happens!! I always swirl my espresso before pouring milk into it anyway 🙂

Slightly different technique for the alternative milks, as I mentioned in the video; slightly more aeration required for the alt milks! And since that extra air can cause a lot of bubbles, be sure to master your angle so that you can introduce the extra air without excess bubbles!

i finally bought my sage espresso pro machiene since 3 days. I introduced my beans how you do it as in your videos, but I have to say everything is stock, no distributor, just the original tamper and yes it comes out properly, I ordered the new distributor and tamper and it will arrive after the weekend, but I can't get the hang of frothing milk and I also watched your videos, I use whole milk and it is in the refrigerator and when I froth it is just hot milk and no foam, I don't understand it if I just take the milk from the store, it foams and has not been in the refrigerator. therefore what should I do, I am desperate

Yes, kind of! I mean you can't do it without crema or a substance with a similar density/texture. For example if you try to do latte art in moka pot coffee (no crema), you've gotta pour extra milk into the base coffee to create a fake layer of crema. But if it's a well pulled shot, then you should be able to pour latte art into it. No need for excess thick crema

I think I've asked this on your video before, but where did you get those cups? esp that yellow/orange one, If I wanted to get those cups in other colors or patterns what type of cup should I look for? Thanks for you videos.

Heyy I recognize you! 👋🏼 thanks for watching my content! amzn.to/389b5vs That's the cup/size I use for my lattes most often. Big enough to do sufficient latte art (you can fit even more art in there if you're advanced) and small enough to not have diluted espresso hahaa
