Okay, this was concise and clear and exactly what I needed after discovering a pretty far gone tomato in our “fruit rack”. Also, damn that hair is amazing! Kudos for sticking through that awkward phase during the “grow out.”

How does this apply to fermentation? I ferment (very) hot sauces, so i get my garden peppers in pretty small harvests, but even with as many plants as i have, I usually can't just start a hot sauce with any one harvest. would the vinegar kill too much of the lactobacillus? my inchoate intuition says "do this for the first and/or second harvest to keep them fresh. don't do it for the last one though. over time, the lactobacillus will repopulate the skin of the first wash, and the last harvest will bring in enough of its own lactobacillus if you're putting them in together"
