Also I think that the angle between the ear and the plant stalk is greater. As the corn ear matures it 'sticks out' more. I find that the over mature ones have all the features of a full corn but the shuck is think and starts to wrinkle

Wow, it is really beautiful where you are there and I am sure that many will admire that corn harvest this year given the challenges that the US farmers have faced. (Fingers crossed for a top price for you!) I am glad you uploaded this video as I find it hard to judge the maturity of the cob, with just a garden level of experience. Even feeling the cob to ascertain its level of readiness is hard. One problem I once had was that the silks had long gone before that flower and pollen were ready, mostly it is tip fill/ poor pollination that is an issue for me. I cannot plant out until end May/ June, so plant young plants as opposed to direct sow. Very interesting, thank you.

Does the diameter of the stalk have any relation to the maturity of the ear? Or can that vary by variety?

Not really but usually the bigger the stalk the bigger the ear

Yes but the problem is it tends to tear up the ears.
