Even though the bottom is perfectly cooked, even towards the darker side at times, the top is still runny and makes a mess when flipping! How do I fix this?

Are you seeing the edges start to dry and bubbles on top before flipping? You make want to lower the heat slightly to give more time for the center of the pancake to cook. Also, flip only about 3 inches high so it doesn't make a mess.
