What you mean by back probe?you haven't showed the multimeter settings, like positive and negative(either the positive connected to the ground or the com connected to the ground

I have a 97 Ford F-250 and my truck immediately dies after I start it. However, whenever I unplug the MAP sensor, it runs fine. Whenever I plug the MAP sensor back in while the truck is running, the truck immediately stalls.

Could indicate a bad MAP sensor but more information is needed to know for sure. Sometimes when map sensor fails or is disconnected the vehicle will then fall on the MAF sensor for all calculations, OR is there is no MAF sometimes the ECU will enter a fail-safe mode that is sort of “middle of the road” for air/fuel mixture that will help you get home at least (also known as limp mode). Im not a professional, just a backyard mechanic that trys to learn everything i can.

How can you test a Frequency based map sensor? Is the MAP sensor suppose to hold the vacuum when you apply with a and pump?

The digital map sensor can also be tested with a vacuum pump, it is very similar, just that the signal is measured in frequency, the map sensor cam provide a frequency of 150Hz KOEO and drop to 109Hz at idle based on the amount of pressure in the intake Manifold. Always compare to vehicle specifications for the sensor you're testing to determine if the frequency is correct.

The reason is because a resistance test is not accurate becausethe circuitif off. You can use a voltmeter and could show you good values, but when current flows resistance will use voltage and you can measure it.
