Nicely done CJ. I have bags of brisket trim in the freezer that I keep to make ground with when I breakout the LEM. Also I like to render down the fat for tallow.

What are your thoughts on freezing a brisket until you have time to cook it ?? Trim before freezing ?

Great question Steve. After I wet age a brisket for 21-28 days, I will freeze it if I'm not ready to cook it. It's still in the original cryovac. If I trimmed and couldn't cook it, I place the brisket in a big tupperware container and freeze it. Once frozen, I vacuum seal it and return it to the freezer. I found that if I vacuum sealed while thawed and then froze, it would discolor. Thanks for watching.

It's a Messermeister 10 inch Slicer with a curved tip. Very inexpensive knife I won as a trophy years ago. I just run it against my honer before use and it gets the job done!
